My daughter was begging for garlic chicken for dinner tonight. We ended up stopping at Aldi and picking up a package of chicken for $2.49 a pound. Not the best price but better then most grocery stores when they don't have a sale on it. I ended up altering my usual garlic chicken recipe a bit just for something new. It turned out great! Here's the recipe.
Pudget Garlic Chicken

1/3 cup reduced fat Parmesan cheese
3/4 tsp. garlic powder
1/4 tsp. onion powder
1 pkg. dry Italian dressing mix packet
1 1/2 - 2 pounds of boneless skinless chicken breasts
Cut chicken breasts in half and pound until approx. 1/2 in. thick. In a bowl mix all other ingredients. Spray baking dish with PAM. Wet chicken with water and then place in bowl with mixture until both sides are covered. Place in baking dish and bake at 400 degrees for 20-25 minutes.
