I Have Energy!

I am finally starting to feel like I have some of my energy back. It only took almost two weeks on the 1/2 dose of the new meds to start feeling better. Tomorrow I start the full dose. I really hope my body doesn't react badly to it.

My goal for the day is to get some exercise in. I kind of want to go outside and run. I might just do that. My dog would probably love to go for a nice run. Never mind. I just realized it is supposed to be in the teens today. I don't have the clothes to run in weather like this. Oh well. Maybe I will run on the treadmill and save Jillian Michaels for next week when we start the 30 Day Challenge.

I almost forgot. This morning when I got on the scale I weighed 175 Pounds. I am so thrilled. I haven't weighed 175 in years. I finally got past the 40 pounds lost. I now have lost 41.6 pounds. Very, very exciting! I know it's not my official weigh in day but I was just to excited to wait. :) Next stop is another 10 pound picture to post. That's my favorite part! It always keeps me motivated.

The Pudget 30 Day Challenge

Sharing my weight with all of you over a year ago was the best thing I ever did. It made me realize that I am not alone. The Complete Beck Diet For Life

Over the past few months I have been reading about several fellow weight loss bloggers that have been reading The Complete Beck diet for life. The book sounded so interesting that I decided to get myself a copy. I just started reading it and I thought it would be really great if all of you would read it along with me. I think it would be so helpful for all of us to not only read it but read it together and discuss it each week. I will be changing my comment section so that you can have a discussion with each other without me having to approve it each time. I think this will make it a lot more fun. We can have our own little book club. :)

I have realized through out my weight loss journey that so much of weight loss is about the way we think. It should be as easy as eat less and exercise more but unfortunately it's not. We have to think differently about ourselves and everything we do in order to change our habits. That is why I am so excited about this book. Product Review and Giveaway!!!

A few weeks ago I received a great cookbook to review. It is called "Cook Yourself Thin Faster: Have Your Cake and Eat It Too with Over 75 New Recipes You Can Make in a Flash!". I have really enjoyed going through all of the recipes in this cookbook. They all sound so good.

And The Number Is....Week 56 Weigh In

It's the end of another rough week. My medicine is still making me a little nauseous but mostly I am having problems sleeping. The lack of sleep is leaving me exhausted and with headaches. I start the full dose of my medicine on Sunday. I am just praying that it helps with the pain and that the nausea doesn't get worse.

On the up side I got on the scale this morning and the I saw numbers that I haven't seen in a while. The number on the scale was 176.6. That's a 1.4 pound loss. Almost to my lowest weight. My lowest was 176.4. I hope next week I will be down to 175. That would be awesome! If I wouldn't have eaten a Cheeseburger and french fries at Applebee's yesterday I probably would be down to that today. :) I hadn't been to Applebee's in so long and I just couldn't resist.

Other then at Applebee's I did very well this week. I didn't have much of an appetite but when I ate I did have to make myself eat healthy. When I don't feel well I just want to eat fattening foods. I am proud of myself for not giving in to those cravings. I ate healthy all week (except yesterday).

I didn't get much exercise in just because of my lack of energy. Honestly it takes everything in me to keep my house clean and take care of my kids. Last night I slept a little better and I do feel more energy today so I am going to try to get some exercise in today.

My Week In Review:

1. Exercise: yes

2. Water: Yes

3. Late night eating: No

4. Snacking: Not much.

5. Eating more fruits and veggies: I ate both fruit and veggies this week.

What do I need to work on for next week:

I need to get my energy level back up so I can start the "Pudget 30 Day Challenge" on Monday. I also need to continue to really watch what I eat. Especially since I am so tired. When I am tired I seem to mindlessly eat and only want junk. I plan to be extra cautious of this.

"The Pudget 30 Day Challenge" Update and Rules

I'm sorry about not posting this sooner but I have been having a rough time with my medicine and also my Mom had a stroke this week so I have been very busy.

"The Pudget 30 Day Challenge" will be officially starting next Monday, February 1st instead of this Monday the 25th. I'm sorry for the change of plans. I am so excited to start this challenge and I know many of you are also. Thank you so much for all of your messages and emails.

The goal for this contest is to do the 30 Day Shred (Jillian Michaels) for 30 Days in a row and also lose the largest percentage of body weight. If you aren't interested in taking part in the contest we would still love for you to do the challenge with us. I will be doing updates several times a week during the challenge where I hope you will all comment on how you are doing.

There will be 4 Winners. 2 In-town (or willing to travel to the Bloomsburg, PA area) and 2 Out-of-town winners.

And The Number Is....Week 55 Weigh In

I am very happy with this weeks weigh in. This morning when I weighed myself the scale said 178 pounds. This is a four pound loss for the week. I am really excited but I can't take the credit for it. I haven't been eating much of anything since Sunday because of my new medicine. I didn't even make it to the gym today. I really hope my body adjusts soon because I'm not sure how much more I can take. The migraines and nausea are killing me.

I am hoping by next week I will be down to my lowest weight of 176. Then I will be really excited. As soon as I start feeling a little better I am going to start running again. I am actually looking forward to it. A friend and I are planning on running outside as soon as I feel better. It will be fun to have someone to run with and someone to help keep me motivated. I'm excited!

4. Snacking: No. I can barely eat meals right now.

5. Eating more fruits and veggies: didn't eat much of either this week.

What do I need to work on for next week:

I need to start feeling better so that I can get back on track with my half marathon training. I really want to do this. I just need my body to help me out. As soon as the nausea goes away I am going to start running again and start back at the gym. I am ready to get back on track!

No Motivation And No Appetite

This post is kind of funny because on Saturday I felt like I was so motivated. Like I could take on the world. Unfortunately on Sunday I completely went off of my old medicine (Lyrica) for my Firbromyalgia and started my new medicine (Cymbalta). The only reason I am saying unfortunately is because it made me so ill. I was vomiting all day Sunday and had the worst pain in my body and migraine I have ever had in my life. On Monday I woke up feeling slightly better and on Tuesday I got a new prescription (half the dose I took on Sunday) to take for the next two weeks to get my body used to it.

I am excited that the Cymbalta may help me feel better but right now I just have no energy and I feel so nauseous that I don't want to eat anything. I did go to the gym yesterday but only because my sister pushed me to go. My workout wasn't as good as usual because I felt such a lack of motivation. I hate this feeling and I hope I get some energy back really soon. The pain I can usually handle but the fatigue drives me nuts. It makes me miserable when I don't feel like I can do the things that I want to do.

Right now I really want to run on my treadmill but I just don't have the energy and I know that I would get sick if I tried. So for the next few days I will be taking a half marathon training break until my new medicine stops making me sick. I am still going to go to the gym but I just can't make myself run for 30+ minutes when I feel like this.

Please pray that my body adjusts to my new meds quickly. :)

I love motivation. That is when I have it. :) I slept really well last night and I think that really helps to keep me motivated. I am not in pain and I can think clear today. It is great.

Last night I had a migraine so I took prescription migraine medicine and it made almost all the pain in my body go away and I was able to sleep. It felt so good. The pain is slowly coming back this morning but no where near as bad as it had been the past week.

I just feel so motivated today. I was just thinking about how in just a few short weeks I will be able to ride my bike outside, go on walks with my family, go to the beach and so many other things that we enjoy doing in the spring and summer.

It's going to be a great year! I am going to be able to run a 1/2 marathon. I am going to feel good about the way I look in a bathing suit and the most exciting part is that I am going to be happy with myself no matter what size I am. I have accomplished so much since I started this journey a little over a year ago and it just makes me so happy.

I am motivated because of what I have done this last year and also the great things to come. Just thinking about going from a 216 pound person to running a half marathon really keeps me motivated because I know what an accomplishment this will be and I will remember the struggle I went through to get that far. It is just so exciting.


I think we all need some motivation to help us on our weight loss journey. What keeps you motivated to lose weight and become healthier?

I Did It!!!

I really did it! I ran for three miles straight and it almost killed me. :) Actually I was feeling a little light headed by the end but I was determined to not give up and not take a break. I ran a whole three miles without even a second of walking in between. It feels so great and so unreal that I can do this. It is one of the best feelings in the world.

This is a picture of me after my first full 3 mile run. I wanted to remember what it felt like to do this and I figured a picture says a thousand words. Now don't laugh!

Today's 1/2 Marathon Training Stats:

Treadmill: (not including warm up and cool down)
Time: 37 minutes
Distance: 3 Miles
Calories Burned: 486


And The Number Is.....Week 54 Weigh In

What a week! This week was probably one of the worst weeks that I have had in a very long time. For starters my family got a mild case of the flu. Then combine that with that time of the month and weaning myself off of my Lyrica. It just wasn't a fun week at my house. I feel bad for my husband and kids. I was absolutely miserable this week. I finally got good sleep last night for the first time in about a week and I feel so refreshed. I am just so glad that this week is over. I am ready to move on and actually enjoy this next week.

When I stepped on the scale this morning I was shocked. It said 182. That's a 2.2 gain. :( I can't imagine that this is right. I didn't eat perfect but I did think that I did pretty well. I really thought I would have stayed the same or maybe lost a little. Boy was I shocked. I hope it is just from being that time of the month. I guess I really need to work my butt off to get that extra weight off.

My Week In Review:

1. Exercise: I exercised more then I had been but not as much as I would have like to because of my family getting the flu.

2. Water: Yes. I have made it a point again to drink lots of water.

3. Late night eating: Yes. It is that time of month and when you add that to lack of sleep it adds up to me consuming lots of chocolate that I didn't' need to eat.

4. Snacking: I finished off the Hungry Girl S'mores Mix that I made last week. That stuff really is a life saver.

5. Eating more fruits and veggies: Definitely ate lots of veggies but not any fruit. Watermelons are to expensive right now. :(

What do I need to work on for next week:

I need to run at least 4 days this week and get myself up to running 4 miles at a time. That is actually my goal for tomorrow's run. I think I may do it outside if it is nice. :) I also plan to go to the gym two days next week.

I am also going to my niece's 2nd Birthday Party tomorrow. I am going to be good and eat as healthy as I can. I don't think it is going to be easy but I am going to do it.

This week is a hard week financially for my family. We will be living off of what we have in the house. I can't complain because God has provided us with food. I just have to be more creative this week to feed my family. No trips to the store to get the ingredients for what I want to make. I guess this week will be what they call a "Pantry Challenge". Wish me luck. :)

A Really Great Snack!

You really need to try this snack. It is so quick to make and definitely leaves you feeling satisfied.

Check out this list of simple ingredients. Peanut Butter, Cool Whip and Bananas (SF chocolate syrup optional).

This recipe comes from one of my favorite cookbooks that I have mentioned many times before. It is from Hungry Girl's 200 under 200 Cookbook.

from Hungy Girl 200 under 200 cookbook

1 medium-large banana
2 Tablespoons of cool whip
1 Tablespoon reduced-fat peanut butter, room temp

Cut banana into twenty circular slices. Lay ten slices flat on a plate and set all of the banana slices aside
In a small bowl, mix Cook Whip and peanut butter until blended. Evenly distribute PB mixture on top of the banana slices on the plate.
Finish off by placing another banana slice on top of each covered slice, making 10 mini sandwiches.
Freeze until solid, about 1 hour. Store in the freezer until ready to serve. Enjoy!

Now That Was Sad.

I'm referring to my exercise today. I'm sure you have noticed that I haven't posted in a few days about my 1/2 marathon training. That is because my whole family has been sick. We have all had a mild case of the flu. We had stomach issues, fevers and all over body aches and chills. The worst part for me was being exhausted.

I finally started to feel a little better today. I am not 100% but at least I had a little energy. I tried to get myself back on the treadmill for a 3 mile run but unfortunately it didn't happen. I decided to push myself and run faster then I have been. I made it through the first mile but almost didn't make it through the second mile and didn't even start a third mile. The cramps in my side were so bad I felt like I was going to fall over. I think it was because I am not yet feeling 100% and I tried running faster then my body is ready for.

Does anyone else get those cramps in your side when you run? How do you deal with them?

Half Marathon Training Update:

Time: 26 minutes (not including warm up or cool down) (this includes 3 minutes of walking during the second mile)
Distance: 2.3 Miles
Calories Burned: 422 - I think - I can't find the paper that I wrote it on.

I have one of these and I absolutely love it. I seriously carry it everywhere I go. It fits great in my purse and my diaper bag. I take it to the gym, to church, to the mall, to my sister's house (she picks on me for that) and pretty much everywhere else I go. I think I am hooked. I have several other water bottles but the only reason I would use them anymore is if somehow I lose my Tupperware one.

Nothing Beats Homemade Pizza

When I was little my favorite thing to eat was my Mimi's (Grandmother's) homemade pizza. I'm not sure if it was the taste of the pizza that I liked so much or just making it with her. It was always so much fun.

Last night I actually made homemade whole wheat pizza dough in my bread maker. My parents are awesome and got me a bread maker for Christmas. I am loving it! Anyway, back to the pizza. I decided just to switch the plain flour for Whole Wheat flour and hope for the best. When it was done rising I was shocked that it turned out perfect. This is a picture of the dough after I rolled it out with my little pampered chef pastry roller. It was so easy. Much easier to roll out then those little mix packets you get at the store.

Then I put pizza sauce on 2/3's of it and on the other third I put on Frank's Red Hot Wing Sauce and some grilled chicken. Of course the spicy part was for me. Let 's just say I can't wait for lunch today. I hope it tastes as good today as it did last night.

I was very pleased with the taste and texture of the whole wheat crust and I will definitely make it again. It is so much cheaper to make pizza at home then to order out.

What A Great Workout!

Just had to share with my about my 3 Mile Run today. I actually ran three whole miles. I ran two miles, then walked for two minutes and then ran 1 more mile. It was so hard. I just wanted to give up that last mile but I didn't. I made myself keep going.

I am so surprised that I went from a non-runner last week to being able to run three miles at a time. That seems like such a drastic change for one week but I guess that is what I am going to need if I plan to run this 1/2 marathon in April.

Half Marathon Training Update:

Better Than McDonald's!

My dinner last night was so good that I had to share it with you. Share the recipe that is. :) I made Grilled Chicken Sandwiches, baked garlic french fries and fried cabbage. It was the best meal I have had in weeks. I'm not being dramatic. It was really that good. Way better then McDonald's Chicken Sandwiches.

I pounded out the chicken and put salt, pepper and seasoned salt on each side. Then grilled it with cooking spray and then after it was mostly done I poured some 98% fat free chicken broth in and let it simmer for a few minutes. Then I put it on a whole wheat Arnold's Sandwich thin (oh so good!) with pickle slices, 2% cheese, lettuce and a little light mayo. It was awesome! I want to make it again for lunch today. :)

I decided to serve it with baked garlic fries since my family enjoyed them so much last time. I just cut potatoes dip them in egg, put in pan and then sprinkle with garlic powder, onion salt and a little pepper. I also had a head of cabbage in the fridge so I made Haluski without the noodles. Pretty much cabbage fried with PAM, 4 TBSP's of Brummel and Brown Butter (Hungry Girl's Pick), salt and pepper. I loved fried cabbage and it is so good for you. I figured that in the portion I ate I had maybe 1/2 -2/3 TBSP or Brummel and Brown Butter (45 calories, 5 grams of fat in 1 TBSP).

What a healthy meal and so enjoyable. My husband loves that I cook healthy for our family and he really enjoys when I change it up and make something different. It makes it more fun to cook if you know that everyone with like it. It is great that my family is eating healthy and still enjoying it as much if not more then the fattening foods I used to cook.

This is a picture of a soda topper my Mom and Dad got me for Christmas. I thought that there was no way it was going to work but I was shocked last night when it did. I love it. It is like drinking right out of a bottle of soda and the best part is that you can close it up and put it in the fridge instead of feeling bad about throwing it away and wasting it.

Yesterday's Marathon Training:

Rest - I laid around until 2:30pm in my PJ's because I was so tired. I finally got a shower and decided to try to exercise but just couldn't do it. So I decided that my body was telling me you exercised hard the last four days so now it is time for a break. So that is what I did. I took a break and it felt good. I am definitely energized and ready to go this morning.

No Energy Today

I woke up this morning with absolutely no energy. It feels awful to be sitting around the house doing nothing when all I want to do is run. I am hoping as the day goes on I will get some more energy. Otherwise this will be a day off from running for me.

Last night I ran 2 miles. I actually ran 1 miles without stooping. I ended up walking about 3 minutes of the 2 mile that I ran. I decided to take it easy yesterday and only do two miles since I went to the gym earlier in the day.

Marathon Training Stats:

Distance - 2 miles
Time 33 minutes
Calories - 400 including warm up and cool down.

30 minutes working with the exercise ball, weights, stepper, jump rope, resistance bands and running in between each ten reps.
15 minutes on the elliptical

I have to say it felt really good to run one mile without stopping. That is a first for me and I found it motivating. I think that is what kept me going. My biggest problem is that my MP3 player died and I had to stare at a wall for the 33 minutes that I ran. I really need a new one but can't afford it right now. Maybe in a few weeks. I really think listening to music makes a run so much easier.

For dinner last night I made my recipe for Pretzel Chicken Cordon Bleu. I love it. This time I used 2% American cheese instead of mozzarella and chicken broth instead of water. I actually like it better this way. And after my run I decided to eat a whole one of these huge pieces of chicken. It tasted so good.

Progresso Soup:

Today my daughter and I split a can of Chicken with Wild Rice. It was so good on such a cold day. It tasted great alongside a warm grilled cheese sandwich.

And The Number Is....Week 53 Weigh In

I am very excited about this week for many reasons. 1, I survived my first year of blogging my weight loss journey and had so much fun doing it. I think it is really cool that I can look back at what I did for a whole year. 2, I decided to run a half marathon to celebrate my 1 year blogging anniversary. Crazy!!! 3. I lost 3.2 pounds this week which puts me at 179.8. Awesome!!!

Wow, what a week. I ate healthy, I exercised a lot and I feel good. I don't want this feeling to ever end. It would be so great to be down another 3 pounds by next week. It feels great to be back in the 170's and even better knowing that I am getting back in shape.

I am so excited because my sister is joining the gym today. We are going to have so much fun exercising together. I am going to show her a lot of the things I learned with the exercise ball, resistance bands and stepper and of course I will do it with her. :) I love that stuff. I can't wait!

My Week In Review:

1. Exercise: Yes, Half marathon training. 2 miles run Monday, Elliptical training #2 Tuesday, 3 Mile run Wednesday, and off to the gym today.

2. Water: Yes, more then I have been in weeks.

3. Late night eating: No

4. Snacking: The Hungry Girl S'mores Mix has been saving me. I love that stuff and it actually is filling.

5. Eating more fruits and veggies: I ate lots of veggies but not enough fruit. I need to check walmart today for Watermelon (my favorite fruit).

What do I need to work on for next week:

I need to focus on 1/2 Marathon Training and what I eat. I want to eat healthy but also eat enough to make my runs a little easier. I still need to figure out that balance.

I also want to lose another 3 pounds this week. It will be hard but definitely doable. Especially with all of the exercise I am getting in with this training.

And The Answer Is...

Yes! I was able to run 3 miles today! Well, kind of. I can't completely say that I was able to run 3 miles. I briskly walked in between running but the majority was running. I have to say that I think I did very well for three miles. I wanted so badly to give up so many times. Especially around 1 1/2 miles. I kept trying to convince myself that it was ok to stop. It was kind of funny now that I am thinking about it.

I realized today that running is hard work and this half marathon may just be the hardest thing I have ever done. I have a lot of hard work ahead of me but in the end it will feel so good.

One thing I learned today was that I really need to eat a bigger meal before I run. That or a protein bar or shake. Today I was going to have 2 of my pumpkin Muffins for breakfast (5's) but my daughter decided that she wanted one and I forgot to get myself another one. Let me just tell you that a 2 P muffin is not enough to eat before running three miles. I honestly think if I would have eaten more I would have been able to run better. Today I was so tired and my stomach was growling in the middle of my run. From now one I am going to be careful with what I eat before I do something like running.

Can I Really Run 3 Miles? An Awesome Giveaway!!!

That is today's question! The answer? I'm not really sure but I am going to work my butt off trying to do it. I read on several 1/2 marathon training plans that the first day you run two miles (did that on Monday) and the second day you run 3 miles. So that is my goal for the day. That and get some laundry done, get my bathroom cleaned and maybe play a game of HiHO CherryO with my daughter. :)

Today's Breakfast was my famous Pumpkin Breakfast muffins. Ok, so they aren't famous and they aren't my recipe but they are so easy to make and taste so good. Click here for the recipe. I made 24 muffins and froze the ones that we haven't eaten yet. I will get them out of the freezer the night before I want to eat them and they will be great. Especially on the days I have to get up really early to take my daughter to pre-school. I had the muffins and of course a big cup of dunkin donuts coffee that my parents bought me for Christmas. Today it was French Vanilla. It is awesome! Did I tell you they also got me a Dunkin Donuts gift card. How sweet is that? Now I don't feel guilty about going to the drive thru to get a coffee every once in a while. I really do have the best parents in the world. I don't know if they realize how awesome they are. They are always there for me when I need them and they support me in everything I do. Although my Dad did laugh at me when I told him that I am going to run a marathon. The worst part is that he tried to hide the laugh. It was so funny. He was probably picturing me running the bases (huffing and puffing) when I played softball as a teenager. Running never was one of my Strong points but boy could I hit the ball. :) I can't say I blame him for laughing. I have been laughing inside for the past few days. That's what make it that much better. The unexpected person proving that she can run a 1/2 marathon. Awesome!!! My parents really would do anything for me. It is a great feeling to be loved that much. It's funny how you don't realize what a good thing it is until you are an adult. I love them so much!

One Year And Still Going Strong!

Today is my One Year Blogging Anniversary. Can you believe I have been writing this blog for a year? I can't. It seems like just a few weeks ago that I started this weight loss journey. Times really does fly.

I have a big announcement to make. In order to Celebrate my One Year Blogging Anniversary I have decided to RUN A HALF MARATHON! How crazy am I? I am feeling kind of crazy and almost ready to delete every word I just typed because once I post it I have to do it. :)

I am going to stay strong and use lots and lots of determination to conquer my goal. I am so excited and scared at the same time. I feel like a crazy person. What makes me think that I can do this? I don't know. I am just really determined to do something special to celebrate my 1st year of blogging.

Details? I will be running in St. Luke's Lehigh Valley Half Marathon at the end of April. Yeah, I know that is less then 4 months to train. Is it doable? I'm not sure but I am sure going to do my best to be successful in this run. I need to start training soon and I really don't know where to start. I need to start doing some research very, very soon.

This whole post sounds so silly to me. I have never ran a race in my life let alone a half marathon. I need to publish this post very quickly before I back out. Please let me know if any of you have any training advice or know of any sites that have helpful information.

The best part of doing this marathon is that any money I raise will go to the Leukemia & Lymphoma Society (LLS) to help cure blood cancers. Now that is pretty awesome! Am I Crazy???

I'm Back And Better Then Ever!

In regards to running that is! I had to share my excitement with all of you today. My husband and a friend of ours picked up my treadmill from my parents house on Saturday and it is now sitting in my dining room. You read it right. It is in my dining room and yes it is a little tacky but I am still really excited.

We bought a treadmill about 6 years ago before we had children. It is a really nice one and I was very disappointed when we had to get it out of the house because we no longer had the room for it. My parents kept it at their house for the last 4 years and used it here and there but really didn't want it any more. On Saturday I woke up and made the decision to bring it back to our house and put it smack dab in the middle of our dining room. It really is the only place I can put it so that I can exercise and still keep an eye on my kids. We have a baby gate separating the living room and dining room but other then that it is pretty open.

I am so happy to be able to use my treadmill again. This morning I hopped on it in hopes to start the Couch to 5 K program all over again from the beginning. I was really disappointed to find my MP3 batteries dead. So I decided to just time it. 60 sec run/90 sec brisk walk for 20 minutes. I grabbed my Tupperware water bottle (which doesn't ever leave my side. I love it!) and hopped on. I ran and ran and ran for 12 minutes straight. That may not sound like a lot to some of you but that is longer then I have ever ran in my life. It felt so great! After my 12 minute run I walked briskly for two minutes and then ran for another 6 minutes, then a 90 second brisk walk and another 6 minute run and of course my cool down.

How awesome is that? I am just so proud of myself today that I have been on an exercise high. Does anyone else experience an exercise high when they are done? It is such a great feeling.

I can't wait to get back on that treadmill again and run more then 12 minutes straight of course. It is my new challenge to myself.

Breakfast Recipe Review: Hula Scramble

I know I have told you all before but I am just not a breakfast person. Maybe I should rephase this. I am not a healthy eating breakfast person. :) I love breakfast but I want pizza, cupcakes, donuts and anything else unhealthy.

Eating a healthy breakfast has been one of my biggest struggles along this journey. You can ruin your whole day by eating an unhealthy breakfast if you are not careful. I am still struggling with it and trying hard to make it work. I have shared this before but I am willing to spend more money on my breakfast foods just because it is so hard for me to find something that I want to eat.

This recipe is from the Hungry Girl "200 under 200" cookbook. It looked good in the book so I decided to try it. It is really, really good. I am not much of an egg person but I really found it interesting. The pineapple and ham really made the dish. I am actually going to make it for myself for breakfast again today as soon as I am done posting. I can't wait!

Hula Scramble
Hungry Girl 200 under 200 by Lisa Lillien

1/2 cup fat-free liquid egg substitute
1 ounces (about 4 slices) thinly sliced extra-lean ham, chopped
1 canned pineapple ring packed in juice, chopped
1 wedge The Laughing Cow Light Original Swiss cheese, cut into pieces.

Bring a pan sprayed with nonstick spray to medium heat. Add ham and pineapple. Cook for 2 minutes, stirring occasionally.

Add egg substitute and scramble with the ham and pineapple. Once scramble is a little more then halfway cooked, add cheese pieces. Continue to scramble until cheese has melted and egg substitute is fully cooked. Eat up!

Makes 1 serving. 4 P's

Starting The Year Off Right

The veggie tray I cut up today. I bought everything at Aldi except the dip. I usually buy fat free but my husband picked up light.

I'm sure many of you have done the same as I did at the start of 2010. Go to the grocery store in hopes of finding some kind of new healthy, low fat food to start the year off right.

I did my shopping a few days ago and these are a few of the things I got. Our budget is really tight right now (still trying to catch up after Christmas) so I am making sure to spend my money very wisely. You ask how I am doing that. I made a list of everything I needed and wanted. Then pretty much scratched off everything I wanted. This left me with a nice sized list. I went through that list and figured out everything I could get at Aldi and marked it on my list along with items that I might be able to get there. I stopped at Aldi first and got everything I could off of my list plus a few extras. I spent about $60.00. This included food for two Holiday Parties. I then went to Giant (our grocery store) and purchased everything else on my list. I spent about $25.00. I don't normally spend this much money on food each week but I was living out of my cupboards the month before Christmas so I really needed to restock. Plus the food for both parties accounted for $25-$30 worth of food. The price of food adds up way to quickly.

I do feel like I got some really great deals on most of the food I bought. Here are a few pictures of some thing I bought to start my year off right.

Egg are one of the healthiest, least expensive foods you can buy. You can do so much with them. The Egg Beaters (store brand) I purchased on sale to make a recipe called Hula Scramble.

A head of lettuce that cost me just over a dollar from Aldi. I cut it, washed it and put it in my new Tupperware Fridge Smart Container. My friend Nyky at The Crazy Crabb gave it to me when I cleaned my fridge out and I have been dieing to try it. I will let you all know how it works.

6 big Apples, 6 big Oranges and 12 Tangerines. I got them all at Aldi for $7.00. What a steal.

Salad Mix that my husband picked up at Weis Markets for $2.00. I put it in my awesome Tupperware Vent and Serve bowl that I got for free when I had a book party. I use this bowl for everything.

Carmel and Vanilla pudding. I needed sugar free vanilla but my store doesn't carry it so I went with this instead. I am going to use it to make Pina Coloda Cupcakes. I will share the recipe and pictures later. They were on sale 2 for $5.00. I still think that is expensive but I really needed it for the recipe.

Looking Back On 2009

Wow! I can't believe that I have changed that much since this time last year. It almost seems crazy. No wonder I feel like a different person. I really look like a different person. I knew that I looked like I lost weight but I didn't realized that it was so drastic. I am so glad I found these pictures.

My husband just quickly glanced over my shoulder and said "Who is that?". Then he realized that it was me. Too funny!

Below are some more pictures. The first one is from the first day I started this blog. Almost exactly a year ago. These pictures really are amazing me. I have decided that I definitely like the new me better. :)

When I look at these pictures it brings back so many memories of this past year. The struggles but mostly the way I felt every time I past a milestone. Not just with my weight but with my health, exercise, the confidence I felt being in a wedding and deciding to get a drastic hair cut.

This year has been full of so many ups and downs with my weight loss. You can see that just by looking to your left at my weekly weight loss chart. It hasn't been an easy, quick weight loss for me. It has been a gain here and a loss there but in the end it all added up to a very nice loss and a drastic change in my body and my mind.

It was so awesome last night to end the 1st year of my new lifestyle knowing that I succeeded. It didn't all happen the way I wanted it to and it certainly didn't happen as fast as I would have liked but I lost a lot of weight and I am determined to lose more and keep it off. I can't say that this time last year I wasn't dreaming about weighing 80-100 pounds less then my starting weight. I really thought that was a reasonable amount to lose in a year if I really tried. Now I look at it and think that I was being ridiculous thinking that. That is way to much weight to lose in a year. I would never have been able to keep it off. I'm not saying that it isn't possible for someone else but for me it would not have been a good thing.

I can't say that I am not a little bit disappointed in myself in regards to my weight loss this past year because I am. I wish I would have lost another 10-15 pounds then I did. I know that if I would have really tried I could have done it. But I didn't try hard enough the past few months and I didn't lose the weight.

Mostly I am happy and so proud of myself. When I look at the pictures of myself above I feel so happy. I remember how awful I felt (physically and emotionally) last year at this time. I just wanted to crawl in a hole and not let anyone see me. I didn't like the way I looked or felt. I never, ever want to go back to feeling like that.

I have decided that I really like the new me! The new body, the new hair and especially the new frame of mind. I feel good!

I haven't yet set my new goals for 2010 but I am in the process of working on them. I want to set reasonable goals that I will be able to do. I plan on thinking about it a little more tonight and I will let you all know what they are and how I plan to accomplish them tomorrow.

For now I am going to enjoy my little weight loss high and have a wonderful night with my husband and my girls.


A New Fun Snack: Chewy S'more's Snack Mix

I decided to try a new recipe in Hungry Girl's 200 Under 200 Cookbook. Today I made a quadruple batch of Hungry Girl's Chewy S'more's Snack Mix. Look at how wonderful looking it turned out.

It was so quick and easy to make and it only cost me a few dollars (using store brand products. The bowl above has 24 (3/4 cup)servings. I figured out that it cost me less then $5.00 for all of it and by storing it in Tupperware it should last me quite a while. I am actually planning on taking some of it to a family Christmas party on Sunday. It will be nice to have a healthy fun snack while I am there.

It really is a fun snack. Who can resist Cocoa Puffs, Golden Grahams, marshmallows, kettle corn and tootsie rolls. Especially when you get 3/4 cup of this mix for 2 P's.

Chewy S'more's Snack Mix:
"Hungry Girl 200 Under 200 Cookbook" by Lisa Lillien

2 cups popped 94 percent fat-free kettle corn microwave popcorn
1 cup Golden Grahams cereal
3/4 cup Cocoa Puffs cereal (original)
3/4 cup mini marshmallows
10 Tootsie Roll Midgees

Chop Tootsie Roll Midgees into very small pieces

In a sealable plastic bag or an airtight container with a lid, combine Tootsie Roll Pieces with all of the other Ingredients. Secure bag or container and shake thoroughly.

Makes 6 Servings

And The Number Is....Week 52 Weigh In

It has been two weeks since I weighed in and all I can say is YIKES!!! I stepped on the scale this morning and it said 183 pounds. Yeah, that is a 3.4 gain. I really shouldn't be surprised by this. I have eaten like a pig for the past two weeks. I ate everything and anything I wanted. I'm not sure why I gave myself permission to do this but I did.

Today I started the new year off right. I had Hungry Girl's Hula Scramble for breakfast and a lean hamburger w/ laughing cow cheese and two perigees for lunch and the same for dinner plus one more perigee. I plan to have a light snack and 25 calorie hot chocolate later on with my girls. It really felt good to eat healthy and think before I put food in my mouth. I actually went through my old posts, recipes and Hungry Girl cookbooks to plan some meals for the week. I can't wait to see what the first week in 2010 brings for me weight loss wise.
