Check Out This Recipe!

You have to check out this recipe on Finding Radiance - my weight loss journey. Lori posted a recipe for low fat, high fiber muffins. She says that they are big, like Dunkin Donuts
BIG, for a fraction of the fat and calories. I don't know about you but I love Dunkin Donuts muffins so I can't wait to try this recipe. I just have to figure out what oat fiber and designer whey protein powder are and hope that they don't cost to much.

You really should check out Lori's blog. She is such and inspiration. She has lost over 100 pounds. Way to go Lori!

Dessert Of The Day - Heath Bar Cake

I found this recipe years ago on the Weight Watchers message boards. I decided to make it for a picnic this past Labor Day. Let me just say that it was the hit of the picnic. Everyone loved it! It really tastes so unhealthy and I only had to buy two ingredients that I didn't already have around the house (fat free caramel topping and Heath bars). This isn't a recipe I would make every week because it could get costly but it is a nice treat and perfect for a picnic or get together.

If you are looking for a great tasting low fat dessert this one is for you.


Heath Bar Cake:

Ingredients:
1 box Devil's Food Cake mix
10-12oz Diet Coke
1 or 2 egg whites
6-oz fat-free caramel ice cream topping
7-oz fat-free sweetened condensed milk
1 cup Heath Bits
1 container fat-free cool whip

Directions:

Mix cake mix, egg white and diet soda. Bake at 375 degrees for 35 minutes or until toothpick comes out smooth in a greased 9x13 pan. During the last few minutes of baking, put caramel and condensed milk in a sauce pan and stir on medium low heat until smooth. Take cake out of oven, and poke holes all over the top. Pour caramel mixture over warm cake, filling in the holes.
Sprinkle Heath Bits over the top, reserving some for the top. Cool completely.

Cover with container of fat-free cool whip and sprinkle with remaining heath bits. Put in fridge until ready to serve.

Yields: 24 servings
Nutritional Info per serving(varies according to brands used): 193 Calories, 5.25 g. fat, 1 g. fiber

Notes: These are notes from the original poster (sorry, I don't remember who it was).
I prefer to use 2 egg whites for a lighter, better consistency. Watch cake during last few minutes of baking as the cakes made with soda are easily over baked. Use 1/2of the Heath bits and reduce points.

No More Midnight Munchies. Yeah!!!!

I think I have found a solution for the midnight munchies. Scale Junkie left me a message in response to my midnight munchies post earlier in the week. She said that she found that midnight munchies usually means a good weight loss in the morning. She combats the munchies by telling herself that she doesn't want to ruin that weight loss.
This really is some great advice. I really think it will work for me to think that my being hungry will mean a great weight loss in the morning if I don't give in to the cravings. What a great incentive. I love it! She also suggested eating an evening snack consisting of a protein and a healthy carb. Thanks again Scale Junkie!


And The Number Is....Week 4 Weigh In

As you all know this has not been the best week for me. I have done a great job staying on budget but I feel like I have been eating everything I see. Alright, maybe it wasn't that bad but after two nights of the midnight munchies I was starting to feel very depressed. I just want to say a big thank you to everyone who sent me emails of support this week. It has really helped me to remember how much I want to lose this extra weight and become healthier.

I really do want this. I want to do so many things that I can't do at this weight and I want to feel confident doing them. I just have to remember this every time I am tempted by that bag of cheetos, a chocolate candy bar or that brownie mix that has been calling me all day. It is a good thing it is a mix otherwise I may have eaten the whole pan by now.

And the moment you have been waiting for. This morning the number on the scale was 108.5. The sad part is that I was actually happy about this. To be honest I was thrilled. I was just so happy that I didn't gain any of the weight back that I have been working so hard to lose. After I got over the excitement I realized that I could have lost so much more weight this week if I wouldn't have eaten things that I knew I shouldn't. I am just calling it a lesson learned. If I don't follow the plan I will not lose the weight.

Plan for this week:
1. Start using some willpower.
2. Drink lots of water (this is one thing I did very well this past week).
3. Track everything I eat on Weightwatchers.com even if it is a Hershey's bar with almonds :)
4. Exercise at least 4 times this week (I think I only exercised 3 days this past week).
5. Stay on budget. I have to stock up on more healthy snacks. If anyone has any inexpensive snack ideas I would love to hear about them.
6. NO MORE MIDNIGHT MUNCHIES!
7 Eat more veggies.

Midnight Munchies

Does anyone else have a problem with waking up in the middle of the night hungry? Last night my daughter was feeling better but I still woke up at 12am feeling like I was starving. So what did I do? I walked down stairs and ate a Hershey's bar with Almonds and finished off my bag of Baked Cheetos. The sad part is that I didn't even care at that point that I was ruining the chance of losing weight this week. What is wrong with me? I did great all day yesterday and then ruined my efforts by eating chocolate and Cheetos at 12am. I had this problem when my baby was real little and I was still breast feeding but I haven't gotten up in the middle of the night to eat (unless kids are sick) for about 4-5 month. If anyone has any advice on how to handle the midnight munchies I would greatly appreciate it.

Recipe Of The Day: Crockpot Cabbage With Kielbasa

I found this recipe today at halfmysize.com. It looks so good! I haven't tried it yet but I can't wait. I plan on buying the ingredients next week and making it. I really don't think it will cost that much and I love cabbage. I will let you know if I like it next week and how much it cost. If anyone tries it before I do I would love to hear how it tastes.


Serves - 4

Ingredients:
14 oz. package Healthy Choice Turkey Smoked Sausage, sliced into 1/2" pieces
1 medium (2 lbs.) head of cabbage
1/4 cup water
1/4 tsp. garlic powder
salt & pepper, to taste

Directions:
Slice cabbage into bite size pieces. Add sausage and cabbage to slow cooker. Season with garlic powder, salt & pepper. Add water and stir well. Cook on LOW for 4 hours or until cabbage is desired doneness.
Nutrition Information:
206 cal., 4.7 g. fat, 5.6 g. fiber


Did I Really Eat 2/3s Of A Bag Of Baked Cheetos In One Night???

Yeah, I did. I ate almost a whole bag of baked Cheetos last night. I feel awful about it. This bag was supposed to last at least a week. Unfortunately my baby has a stomach virus. I didn't get her to sleep until 3 O'clock this morning. Stress, lack of sleep and hunger all contributed to the Cheeto binge. I am so mad at myself.
I watched the show Diet Tribe last night and I felt so motivated when it ended and then 2 1/2 hours later I sat on the couch with my baby in one arm and the Cheeto bag in the other. At that point I was so tired that I didn't even care about the amount of calories I was eating. I really hate when I get to the point of not caring.
Today I am going to try to make up for the Cheeto Binge. I am going to cut back on my calories and get some extra exercise (if my baby takes a good nap).
By the way, Baked Cheetos are really not that bad for you in moderation. I can eat a 36 cheetos (1 serving) for just a few Weight Watchers Points (130 calories, 5 grams of fat and 0 fiber). This may be my new favorite snack.

Recipe Of The Day: Crockpot Chicken and Stuffing

Today's recipe is Crockpot Chicken and Stuffing. I love this recipe because it is inexpensive and easy to make in the crockpot. I found this recipe on the Weight Watchers message boards from Halfmysize. I find this recipe to be a great one when you are on a budget because you can buy all of the ingredients at Aldi at really low prices.


Crockpot Chicken and Stuffing

Ingredients:
4 chicken breasts
1 pkg. Stove Top stuffing (I buy the Aldi brand or local store brand)
1/2 cup chicken broth (Aldi now sells Light and Fit chicken broth)
1 can of Fat Free cream of mushroom soup

Directions:
Spray crockpot with non-stick cooking spray. Place chicken on bottom of crockpot (sometimes I put it in frozen if I let it cook for longer then 7 hours). Pour broth over chicken. Mix together the stuffing and soup and place on top of the chicken. Cook on low for 7 hours. I usually serve with a salad or warm vegetable.


Buying Healthy Food On A Budget: Part 2 Looking For Store Deals

I love finding great deals at the grocery store. It is like a game to me. In case you can't tell I love a challenge. Today I was a the grocery store. I ran out of Pirate's Booty and I wanted to pick up some salad mix. I have not been eating veggies like I should just because they can be so expensive so decided I would get some while they are 2 for $5.00. Not a great price but less expensive then the regular price. When I got to the store I found a large package of Spring Mix with 3 $1.00 coupons on it. I got 1 lb of organic spring mix for $3.00 and it is beautiful. It looks so good I think it will probabley last me 5-7 days before it spoils. What a buy!

I always recommend going to the grocery store during the day on a week day. This is when I seem to find the most discounted items. I often find great buys on Laura's Lean hamburger. When it gets close to expiring they mark it down to about half the price for quick sale. I just bring it home, repackage it and stick it in the freezer. I love it when I find this type of deal. Last time I found the hamburger on special I bought 7 or 8 packages. I bought all that they had. Another great buy I found was whole Turkeys and Turkey Breasts at $1.29 a pound. I didn't buy one because I didn't have enough money left in my budget but if you can afford it I would suggest checking your local grocery stores for great mark downs. This is the time of year that most grocery stores mark down their turkeys because the holidays are over. I hope they still have some left next week.

If you have the time to look you can ussually find something you need at a great price. Items that expire are always marked down for quick sale a day or so before the experation date. You just have to be at the store at the right time and know where to look.

And The Number Is.... Week 3

As you can tell by my last post this week has not been great. I didn't track my food every day, drink the proper amount of water or exercise as much as I have been the past two weeks. My goal for this coming week is to get back on track. Track my food (point) every day, exercise at least 4 days this week and drink lots and lots of water.

The number for this week is 209 pounds. I lost one pound. It is not what I would like it to be but it is better then a gain. To tell you the truth I was expecting a gain because of the way I ate this week. I didn't eat awful but I did feel like I was eating more then I should be.

This week I seemed to be very hungry. It has definitely been more difficult this week then the past two. I'm not sure why but I just wanted to eat all day long. I hope this week I don't feel as hungry. I ran out of Pirate's Booty and I think this may be some of the problem. I usually eat this later at night when I get hungry. This week I didn't have any and it seemed like I would have to eat several things before I felt satisfied. I think I am going to go out tomorrow and buy some more Pirate's Booty.

I realized this week that drinking lots of water really does help you lose weight. When I realized that I had gained two pounds on Tuesday I started drinking a ton of water. I think this is the main reason I lost the two pounds plus the extra one. I definitely plan to keep drinking lots of water.

+2 Pounds???

Yes, I got on the scale this morning and realized that some how I gained two pounds. I'm not quite sure how that happened but I guess it could have been the two biscuits and the cornbread muffin at cracker barrel Sunday night. Did I mention I covered them with apple butter. Lots and lots of apple butter :). The apple butter tasted so good I think I could have eaten a bowl full for dessert. I would have eaten more but my sister said "Jess, I don't think that stuff is very healthy" (thanks Kristin, kind of :)). Also, I haven't been drinking as much water as I should be and I haven't exercised in about 5 days. It seems like this week has been so busy that I haven't been able to find the time to track everything I eat on Weighwatchers.com or exercise.

Anyway, I need to get back on track. I'm so glad I stepped on the scale this morning. It was a little depressing but It made me realize that I need to make the time to track my food, exercise and drink lots of water. I've lost six and a half pounds so far and I don't want to let a busy week ruin my weight loss. So for today and tomorrow I will be doing my best to lose those two pounds and maybe some more. I am going to drink lots of water and really make sure I make the right choices with my food. I am also going to try to get as much exercise in as possible to try to make up for the lack of exercise the rest of the week.

Recipe Of The Day: "Snickers" Pie

I love this pie. It is crunchy, and has so much peanut butter and chocolate flavor. It also takes very few ingredients which is helpful when you are trying to save money. I heard that you can find Grape Nut cereal coupons often in the paper. You have to try it!


Snickers Pie

Ingredients:

12 ounces (1.5 cups) fat-free vanilla frozen-yogurt, slightly softened
1 small box sugar-free instant chocolate pudding mix
1/4 cup chunky peanut butter
1 cup Cool Whip Lite®
3 ounces nugget cereal (Grape Nuts)

Directions:

Mix all ingredients together and pour into 8" dish and freeze. Take out of freezer 10 -15 minutes prior to serving.
Yields 8 servings.

Nutritional Info: (per serving) 131 calories, 4 g. fat, 1 g. fiber

Pirate's Booty - I know I have said this before but it is just that good. I just found out today that Babies R Us sells it and they even have the Veggie kind. At a little over two dollars a bag it is a really tasty low fat snack.

Jello 60 Calorie Puddings - I just got these 2 for $5.00 and I used $1.00 off coupon. I got 12 puddings for $4.00. I really love these. I feel like I am indulging for only 1 Weight Watchers Point.

Veggie's and T. Marzetti's Fat Free Veggie Dip - I found a great deal at my grocery store a few days ago. I got a huge veggie tray with my favorite dip for $6.99. The original price was $13.99 and the veggies are still in perfect condition. I was so excited to find this deal. I always check the fresh produce for clearance items.

South Beach Living Oatmeal Chocolate Chunk Cookies - These are so good!!! I don't normally buy them because of the price but they were on special this week at the grocery store.

And The Number Is..... Week 2

This week has been a good week. It is getting easier to eat healthy each day. I have not touched a piece of real chocolate in about 10 days. This may not seem like much to some people but for me it is an accomplishment. A few times this week I looked at the Hershey's Nuggets with Almonds on my kitchen table and wanted to eat them. At times it was hard. I tried to convince myself that if I just eat one it will be ok but I know how that goes. Kind of like my brownies last week. I can't stop at just one and the more I eat the more discouraged I feel so I just keep eating. This doesn't mean I didn't eat any chocolate. I don't think I could handle that. I had chocolate pudding, chocolate Vita Muffins, South Beach Living Chocolate cookies and Skinny Cow Chocolate Ice cream cones. So I did enjoy some healthy versions of chocolate. I am really proud of myself for not touching the real stuff.

Something that really surprised me this week is the amount of water I drank. I don't really like to drink much but this week I drank at least 8 8oz glasses of water. Last week I had to think about it. This week I very rarely thought about it. I only drank two cans of soda all week. I usually drink two to three cans a day. I definitely feel fuller when I drink this much water. I have noticed that I don't have as many cravings and I don't feel hungry all of the time. I am definitely going to continue drinking a lot of water.

I did fairly well with my food choices this week. I did eat too much at my sister's house last Thursday but it really tasted wonderful. Also, my best friend stopped by with Chicken and waffles, mashed potatoes and corn. It was the best chicken and waffles I ever tasted. I only ate 3/4 of a waffle (a large homemade waffle :)) and about 1/3 of a cup of potatoes and a little corn. I was surprised at how full I was after I ate this. Don't get me wrong I'm sure I could have eaten another plate full but I decided to stop. I was surprised at my self control with that one. I actually sent the leftovers home with my dad. Now I don't have to worry about being tempted to eat it. Other then that I ate really healthy. My new favorite lunch is a turkey and ham spinach wrap. I ate this three times this week.

I did very well with my Weight Watchers Points. I counted everything I ate. Even when I really didn't want to. I actually had 4.5 Points left at the end of the week. I am loving Weight Watchers online. I know exactly what I can eat and how much of it I can eat. It is a great way to keep track of everything that goes in your mouth. Yeah, you could cheat and not list something fattening that you ate but I figure I would only be cheating myself.

Exercise is something that I am not very fond of but I am really getting into it and enjoying it. It could be because I am doing it on a Wii Fit :). This summer my husband got a promotion and we decided to celebrate by buying a Nintendo Wii and Wii Fit. We played it maybe two times in the past 6 months (not because we didn't like it just because we didn't have time). Last week we decided to pull that baby out and start using it. It was the best thing we could have done except for the fact that my husband has been playing Mario Cart every night of the week :). The good thing about that is that when he is done he says to me do you want me to hook up the Wii Fit for you. So if I haven't had time through out the day or I forgot then it is a good reminder that I need to exercise. I exercised four days this week. I would like to do more but it is a good start. I love the aerobics exercises especially the stepper and the hula hoop. I make myself do between 30 and 45 minutes at a time. I don't count from the time I get on the Wii until I get off. I count the minutes that the Wii calculates (Only your active minutes not the down time when they show scores and stuff). If you need to get some exercise I would definitely recommend the Wii Fit. Yeah, it still feels like exercise but the competitive nature in me takes over and all I can think about is beating my last score.

And the moment you have been waiting for. Today I weighed in at 210 pounds. Yeah!!! I am very happy with this weeks weight loss. Even with the few set backs I had I still was able to lose 3 pounds. I had hoped for five pounds this week but I know it doesn't always happen that way. I will say that their was not one moment of the week that I felt really hungry. If I started to feel hungry I got something to eat. I just made healthy choices and was able to stick to my plan. It wasn't all easy especially when I couldn't eat seconds of the chicken and waffles but it seems to get easier every day. I am learning to use some self control. It's a great feeling knowing that I can really do this. I am so excited for the weeks to come! I am looking forward to going to water parks, camping, the park and maybe even the beach without feeling bad about my weight. I am using all of this as incentive to drop the pounds.

Buying Healthy Food On A Budget - Part 1 Coupons

I am learning how expensive it can be to buy healthy food. This is the first time that I have ever tried to eat healthier and lose weight on a budget. In the past I bought whatever food I wanted whenever I wanted and didn't worry about the cost. Now, I have two children and I am on a very strict budget in order to be a stay at home mom.

This is the reason that I started PUDGET. To help other people like myself work within their budget in order to eat healthier. I will start this series off with my favorite way of saving money.

COUPONS - I recently discovered that using coupons actually makes a big difference in what I can afford. I wish I would have discovered this years ago. Imagine how much money I could have saved.

Anyway, I love coupons. They allow me to purchase items that normally don't fit into my budget. Now, I'm not talking just straight couponing (just using coupons on items that you normally buy). I use coupons and kind of play a match up game with sales flyer's from the stores in my area. I start out by clipping every single coupon out of the Sunday News Paper. I save them all in a coupon organizer which I have to say is not as organized as I would like it to be. When I figure out a better way to organize I will let you know. Please let me know if you have any suggestions.

You may think it is silly and a waste of time to clip every coupon but I find that it has been well worth my time in saving the past few months. Let me tell you exactly how I do it. Every week I grab all of my sales flyer's. This includes grocery stores and other stores like CVS and Rite Aid. Then I glace through my coupons just so I have an idea of what coupons I have. Then I go through each flyer and match up the good sales to the good coupons and decide if it is something I can afford. A lot of the times I get the items for free or less then a dollar.

The two big grocery stores in my area double coupons up to $1.00 and they have their sales flyers online. I go to their site and click on each item in the flyer that I have a coupon for and it makes a little shopping list for me. Then I go back through that list and decide which items are my best buys and which items I really don't need. This allows me to keep track of how much I am spending and easily cut out anything I can't afford before I go to the store.

This week I spent $110.00 and saved about $30.00 in coupons. I usually don't spend this much at the grocery store in a week and the sales didn't match up with the coupons as much as usual but it will all even itself out in the next few weeks. I will list below the items I got for $110.00 just to give you an idea of the great buys I got. The grocery stores didn't have many great buys on meat this week so I hoping to stock up next week.

4 bags of pirate's booty
4 cans of Hormel turkey chili with beans
10 stage 2 jars of baby food
10 stage 3 jars of baby food
2 boxes of DHA/ARA baby cereal
1 package of Mission wraps (I love to make wraps with these. I will write another post with some great recipes for these.)
2 boxes of 100ct packets of Splenda
2 fresh Sweet Red Peppers
2 bag of baby spinach
2 boxes of fresh blueberries
1 Skinny Cow ice cream sandwiches
1 Skinny Cow Ice cream cones (kind of like Nutty Buddies)
1 half gallon of Skim Milk
1 half gallon of 2% milk (for my daughter)
4 6 packs of Sugar Free Jello Pudding cups
2 Snack packs of pudding (for my daughter)
2 cans of pumpkin (for that awesome cake recipe I posted a few days ago)
10 Del Monte Fruit Natural Cups (They even make ones that are sugar free made with
Splenda)
1 package of Hilshire Farms Deli Select Turkey
2 Packages of Healthy Ones honey ham and Turkey Breast 97% fat free
1 Wesson Canola Oil
1 fat free Sweet and Sour Dressing (I love this on my spinach salads
1 Strawberry Nesquick (for my daughter)
1 box of Dora Fruit Snacks (for my daughter)
2 bags of Steam Fresh Meals for Two
3 boxes of Giant brand cake mix (check out recipe on earlier post)
1 container of Pillsbury frosting with sprinkles (for my daughters cake)
1 South Beach Living Chocolate covered peanut butter wafers
1 South Beach Living chocolate covered oatmeal cookies
1 something made by Nabisco that I can't remember
2 boxes of Kellogs Frosted Flakes ( for my husband and daughter)
2 boxes of Weis quality Crispy Rice cereal
3 pounds of Anjou Pears
2 1/2 pounds of Red Delicious apples (for on my salad :))
4 Naval Oranges
4 cans of Campbells Tomato Soup

I think I got a lot of food for $110.00. This is why I match my coupons to the sales and then plan my weekly menu. This food will definitely last me more then a week. I am hoping next week I will only have to buy, eggs, milk and meat.

I also use coupons at other stores for things such as baby formula, diapers, shampoo and other every day needs. I almost never buy toothpaste, shampoo, conditioner, toothbrushes, hairspray, tissues and many other items. I get them for free from CVS. I match sales with my coupons and add in my extra care bucks (ECB'S) to get these items and more for free or almost free. It is great. CVS and coupons have helped me to stock up on so many items which in turn really helps me stick to my budget. Click here to check out "The Thrifty Mama". She posts the best deals every week at CVS. I think of it as the more I save on these items the more money I have to spend on eating healthy.

Chili Meatloaf Recipe

This is a recipe you will have to try. I found it in a little paperback cookbook that is called "Sweet Possibilities, Splenda Brand". It is my favorite meatloaf recipe. I even like it better then any unhealthy version I have tasted. It is sweet with just the right amount of spice. I Love It!!!

Chili Meatloaf:

1 cup tomato sauce, divided
3 tbsp Splenda, divided
2 tsp prepared yellow mustard
1 1/2 tsp. chili powder divided
1 tbsp dried onion flakes (I love these. I buy a big container of the store brand and use them in everything. Well almost everything. They are very convenient.
1 tbsp dried parsley flakes
1/2 tsp salt
1 pound extra lean ground beef or turkey.
1/4 cup Italian seasoned bread crumbs.

Apples On Salad???

This week started out pretty rough. Thursday night my sister Kristin and her husband Matt had my family over for dinner. She made the best potato soup I have ever had. It had cheese and bacon in it. Unfortunately it was so good that I eat 2 bowls and my second bowl was huge (thanks Matt!) I did try to eat a little healthy. I ate two plates of salad. My sister made a salad with slices of apple on top. It sounds weird but it was excellent. I will probably make my salads like this every time. It definitely keeps a salad from getting boring. You have to try it!
I have tried to make up for my overeating on Thursday by being very careful with what I have been eating the rest of the week and getting in some extra exercise. We went grocery shopping on Friday so my house is stocked with any healthy food you could want. It is great! I will do a post this coming week on how I get healthy food at great prices in order to stay within my budget. I know how expensive it is to eat healthy but I am determined to do it.

I will leave you with a recipe today for Chocolate Cake. I got the idea from Jenny at Frugal Vegcaf. She suggested making chocolate muffins by mixing a can on pumpkin with a box of chocolate cake mix. My daughter wanted to bake a cake this weekend so I figured why not use the pumpkin to make it. She also picked out some icing with sprinkles to put on top. The cake turned out better then any of us expected. My husband said he couldn't tell that it had pumpkin in it. He kept telling me how moist it was. We both decided that we will make it this way every time. It is so much more moist then a regular cake and it is something that I can eat on Weight Watchers. Even with the icing the Weight Watchers points are very low. Thanks again Jenny!

PUDGET TIP - Breakfast On A Budget

I know everyone always says to eat breakfast every morning. It really does keep you from over eating through out the day. If you are anything like me the last thing you want to do in the morning is eat something healthy. Below I will list some of my favorite low fat breakfast foods that taste great and won't break the bank.



1.Chocolate Peanut Butter Smoothie:
Mix the following together in a blender
- 1 cup of milk
- 1/4 cup of Splenda
- 2 TBSP of Fat Free/Sugar Free Instant Chocolate Pudding Mix
- 1 TBSP of PB2 (a low fat peanut butter substitute)
- 6-8 ice cubes (depending on how thick you like it)
- Optional - 1/2 of a frozen banana ( I cut my bananas in half and freeze them in Ziploc bags if I have ones that are overly ripe)


2.Rice Krispies with Splenda on top


3. Waffles with Sugar Free Syrup - I buy Aldi's Fit and Active waffles to keep the cost down. They have a lot of fiber in them and taste great.


4. Pumpkin Spice Muffins - I got this great recipe from Jenny at Frugal Vegcafe. I love it. It is simple, inexpensive and tastes great. Thanks Jenny!

1 (18 ounce) box spice cake mix
15 ounces pumpkin
1 cup of water
Directions
1Mix all ingredients in mixer.
2Makes 24 muffins.
3Cook for 20-25 minutes at 350°F.


Turkey Barbeque

This is such a simple inexpensive recipe that I wanted to share. It tastes great and my whole famiy enjoyed it. I also had some left over so put it on top of some rice for lunch the next day and it tasted great. The whole thing including the buns probabley cost me less then $5.00 and I could have gotten two meals out of it.

Turkey Barbeque:

approx. 1 1/2 lb. of 90/10 ground turkey - (I bought this at Aldi. I think it cost me about $2.50)
1 small onion chopped
1 can of Sloppy Joe sauce - (Anonther Aldi find.)
1/8 cup of Spenda

light hamburger rolls

Fry your chopped onion for approx. 2 minutes in a little Extra Virgin Olive Oil or cooking spray. Throw in your ground turkey and fry until it is completely cooked (I also added a little salt and pepper). When meat is fully cooked add jar of Sloppy Joe sauce and Splenda. Simmer for approx. five minutes and serve.

Week 1 - Weigh In:

Well, It has been a week since my journey has begun. I have to say it started out rough but got so much easier by the end of the week. I will admit that on the first night I ate about a 1/3 of a pan of brownies. Let's just say my 8 month old was up all night and the stress got the best of me. The good thing is that I tracked everything I ate on the Weight Watchers web site and I think it helped to be constantly reminded how depressing it was to see how those brownies took away from what I could eat the rest of the week. That is until I went out to eat with my husband for Chinese food. Click here to read the whole story. Other then those two instances I did really great and I am very proud of myself.

Now it is time for what you have all been waiting for. Week 1's Weigh In. Here goes. I am proud to say that I stepped on the scale this morning and I weigh 213 pounds. That is a loss of 3.6 pounds this week (216.6 - 213). I am so excited. Sure, I could have lost more with out eating the brownies and Chinese food but life happens. I hope every stumble I have will help all of us in our journey. I will definitely say that the brownies and Chinese food were not worth the extra pounds I could have lost. I am going to try to remember this every time I am tempted to eat something unhealthy.

The Greatest Snack EVER!!!


Pirate's Bootie! This may just be the best healthy snack I have ever tasted. My four year old agrees with me on this one. It is kind of a mix between cheese curls and popcorn only better. I think it is puffed corn but I'm not sure seeing that I finished off the last bag I had last night. :) I eat the Aged White Cheddar but I think they have a variety of flavors. Each bag has four servings and each serving is approx. 2 cups. It is a great low fat snack to eat when you just feel like munching. I love that I can sit down and eat a whole bowl of these and feel like I am eating a bowl of cheese curls. What I love even more is that my daughter likes them better then cheese curls! I love when my family loves to eat healthy food. Another bonus is that I only paid a little more then $2.00 a bag. You can't beat being able to eat healthy on a budget!

Eating At Home vs. Eating Out



Last night my husband wanted to go for Chinese food for dinner. We have a really great buffet in our area. I tried to convince him that we don't have the money but he insisted we go anyway. He knew that I had a rough day babysitting and he didn't want me to have to cook. Very sweet but I knew it was a bad idea. Not only did I over eat but I also feel that we wasted $30.00. Oh well. Hopefully I will remember not to do this next time. Below I will list my 5 reasons for eating at home as opposed to eating out.
I better finish this post because I have about five more hours on the Wii Fit before I burn off all of last nights calories;) Only a day and a half until weigh in!!!



5 Reasons why I think eating at home is the best:


1. Less temptation to over eat.
2. Easier to monitor your portions.
3. Less expensive.
4. You don't have to get the kids bundled up kicking and screaming. :)
5. You feel better in the long run.

Day 1 - My Favorite Snack



May favorite inexpensive low-fat snack
Fresh Salsa with Tortilla chips.
No. I don't make my own salsa. It's not that I don't want to I just don't have the time. Instead I buy the Weis Market brand Salsa. I eat it with Mission Cilantro Lime Tortilla Triangle. You would never guess by tasting it that it is a low fat snack. For less than $3.00 you can get a bag of these absolutely amazing chips. Each bag has 14 servings. I love it!!!



Losing Weight On A Budget

Day 1 Of My Journey:



Hi! My name is Jessica. I am a SAHM trying to live a healthier life style on a budget. I have a wonderful husband that I have been married to for almost seven years and two beautiful daughters ages 4 and 8 months. In order for me to stay home with our daughters we live our lives on a very tight budget.

Yes. This is me in the picture. I know I am pretty brave to post this picture but I think it will help all of us to see updates through out my journey. I encourage you to also keep a picture book of yourself though out your weight loss journey. I have found this very helpful in the past.



I have struggled with my weight for as long as I can remember. I was not over weight as a young child but during my teenage years I definitely had a struggle. It is kind of funny because I look back at pictures of myself as a senior in High School and remember thinking how fat I was ( I really wasn't fat but compared to my skinny little Friends I guess I felt fat.).



Anyway, after the birth of my first daughter I decided that I didn't want to be an overweight mother. I wanted to live a healthy lifestyle so I could do all of the fun things that I wanted to with my daughter. This is when I joined Weight Watchers. I was able to lose approximately 40 pounds in less then a year. It was so exhilarating to lose that much weight. At that point I think I weighed about 155 pounds. Not my goal weight but I still felt wonderful. I felt like a new person inside and out. I stayed that weight for about two years.


Then I went back to work. I was working a stressful job and with long hours and trying to properly take care of my family. That is when my weight soared above 200 pounds. Then I got pregnant with my second daughter who was born 8 months ago. After she was born I weighed 206 pounds. I tried to diet off and on for the next 7 months but it didn't work. The sleepless nights didn't help :)



This brings me to last Thursday, January 1, 2009. The day I decided that I need to make some changes in the way I eat. I don't feel healthy or happy at my current weight which by the way is 216 pounds.

I joined Weight Watchers online on Jan. 1st because I have had success with this program before. It is a wonderful program that I can't say enough good about. It teaches you how to eat healthy without feeling deprived. I'm not saying that it isn't hard. It is hard for me not to snack all day. On Weight Watchers you may have cravings but if you do it properly you don't feel hungry.

The hardest part of this journey for me will be eating healthy and losing weight on a budget. With the price of food today it is hard to buy healthy food for the whole family on a small budget.


Through out my journey I will share with you my successes, failures, healthy living tips and recipes.




Today is where my journey begins! I am so excited to start living a healthier lifestyle on a budget and sharing it with all of you!
