Quick, Easy and Inexpensive Dinner Suggestions?

I am leaving in an hour for a soccer game and I am trying to figure out what to make for dinner. We really don't have much food in the house right now and I am hungry for soup or just something warm. I have a ring of turkey sausage in the freezer.

Does anyone have any ideas for a low fat soup or anything I can make with it? Can you tell I am cold and am fighting turning the heat on. :)

Hi Jessica. I went through a soup phase a couple of weeks ago and made four or five different soups in a week. I posed the recipes on my blog. I hope that one of them appeals to you.

hmmm, I like the veggie soup with meat...I think that might be good. Just add some broth with what ever veggies you have and the turkey...??? Maybe???? If you had chicken and some noodles I have a great (and easy) recipe for that!!!
FYI--make your own soup is the way too go--canned as way too much sodium!!!!

We had an awesome baked potato chowder at a Pampered Chef party. I've made it twice since then in the Deep Dish baker. If you use skim milk, low fat cream cheese and low fat cheddar, it's not bad. You use 3 large baking potatoes split in half, microwave them for 11 minutes with 1/2 c milk, rotate their positions and microwave them for another 11 minutes. Whisk cream cheese, slowly adding 3c milk. Add milk mixture to potatoes (after the 22 minutes - you mash the potatoes coarsely then add milk.) Microwave another 5 minutes (you can also add cooked corn and your turkey sausage or ham at this point), then add 4oz shredded cheddar cheese, salt and pepper to taste. You can add more cheddar cheese and chopped green onion in each bowl to taste as garnish.

No fighting the heater here. It was 16 degrees on Saturday! We had a really cold weekend and it's definitely soup weather!

My leader at WW gave this recipe:
-equal parts coconut curry college inn broth (about $2.50 at the grocery store...but I got mine during the buy one get one free week)
-equal parts frozen mixed vegetables (but the big bag from BJ's)
-1/2 to 1 tsp curry powder
-a few dashes of hot sauce.
Boil the broth
Then add the veggies
Let cook about 5 minutes
Blend using an immersion blender or do it in your regular blender.

Thank you all so much for the awesome recipes. They are going to be very helpful this week and next. All of the recipes sound so good. I printed two of them off and I am going to go to the store today and pick up the few things that I need. I am so excited that this weekend is going to be filled with nice warm soup.
