Fridge Front Friday

I really found my list to be helpful this past week. I just wish I would have had one posted on my husbands work bag :). If you don't know what I am talking about you can click here to read my post about my Hershey Kiss binge. I am really glad I had this on my fridge this week because it really did make me think twice about my food choices.

I will start us off with my Fridge Front Friday List for the week. I plan to print my list and put it on my fridge and read a few of these if not all of them each time I look at the fridge.

I Lost 5 %

I just had a message pop up on my Weight Watchers page telling me that I lost 5% of my body weight and that I should celebrate. Wahoo!!!! I'm pretty excited about this. My weight loss is now at 11.4 pounds. It's not coming off as fast as I would like but it never really does. I just wanted to let you all know how excited I am. :)

And The Number Is... Week 8 Weigh In

This week started out well. I decided last week that I would exercise five days out of the week. I actually did it. I am so proud of myself for doing this. It is so much harder then you would think to make yourself exercise everyday. Every day I would try to talk myself out of exercising by saying to myself that missing one day won't hurt or I will just eat less today. Yeah right, me eat less! It is kind of funny the way your mind works by trying to justify not exercising or overeating. Well I won the exercise battle this week. I even started Level 2 of Jillian Micheal's 30 Day Shred. I have done level 2 the past two days and I feel like I am going to die in the middle of it but I will continue to do it because I am already seeing a difference in the shape of my body. My legs seem to be getting smaller and I am starting to look like I have a waist again. I thought I had lost my waist forever after having my last baby but I was wrong and thanks to Jillian Micheals I am getting it back.
I have been drinking a lot of water this week. I did catch myself not drinking much over the weekend. It is so hard to make sure you drink a lot when you are out of the house and busy doing something. When I realized I wasn't drinking much I stepped it up a little and drank extra water the rest of the week.
I am proud to say I tracked every single point this week. I went over by 2.5 points. I am not very happy about eating every single exercise point that I earned. This is something that I have to work on.
I did have a few binges this week that you can read about in my previous posts but I made sure to track every point I ate even when I binged. I realized it is not fun to put 11.5 points in my points tracker for Hershey Kisses with Almonds. :) I really need to stop binging.
And the moment you have all been waiting for. The number on the scale this morning was 205.2. I am pretty excited that I lost almost a pound. I was hoping for two but after my binge two nights ago I figured it wouldn't happen. I really think that if I don't eat my exercise points I will lose so much faster. Maybe I would do better if I don't put my exercise in my tracker then I won't have them listed to use. I am going to try this and see how it goes. I will let you know next week if it works for me.

I Found My Coupon Organizer

Heather from sent me a comment today about how she organizes her coupons. She told me that she would take pictures and post about it later. Boy did she ever. You have to check this out. She has made the best coupon organizer that I have ever seen. I love it! I am definitely going to use her idea to create my own coupon organizer. If you read my previous post about organizing coupons you already know that I could not find a coupon organizer that I liked and that fit my needs. I am happy to say that I have found it and I think it is really going to help me save a lot of money. The best part is that you can spend as little or as much money as you want to create your own organizer. You can purchase all of the items you need at walmart and it really does not look that hard to put together. If you are looking for a better way to organizer your coupons you really need to check out Heather's post.

Another great coupon organizer that I found is from Heather at Money Saving Mommy. Heather also had trouble finding the right coupon organizer so she decided to make her own. Click here to check out her great ideas.

Little Debbie 100 Calorie Chocolate Cakes

These Little Debbie 100 calorie Chocolate Cakes are seriously dangerous. They are definitely as good as they look. The downfall to these in my opinion is that they are really small for 2 points. I would have to eat the whole box to feel satisfied. I think I could eat a piece of cake with peanut butter icing for less points then it would take me to feel satisfied with these. I do love them but I can't control myself around them so I don't think I will be purchasing them again. To me it feels like they packaged normal fattening cake in very small 100 calorie packages. I would rather have something low fat with a lot of fiber. This way I can eat more and feel fuller at the same time.
Don't get me wrong they are really good and I didn't pay a lot for them because they were on sale and I had two $1.00 off coupons. They are just not something that I want to use two points on. Unfortunately I have another box sitting on my table calling my name. :) Maybe I will save them for snacks for my daughter.

Check Out My Burger

I think I'm in love! This burger was so good tonight. It was a Morning Star Farms Grillers Prime. I am always a little leary of these veggie style burgers but they were on sale so I thought I would give them a try. I am so glad I did because it tasted excellent and it wasn't mushy like I expected. I ate it on a 2 point WW bun with one slice of 2% cheese, tomato, onion and ketchup. It was really filling and I feel like I just ate a real cheeseburger. I just wanted to share this with you because I know some of you are probabely leary about this kind of thing but seriously it was excellent. You should give it a try. I am so excited to try some of their other veggie style burgers next time they are on sale. Click here to check out the variety of flavors they have. I think next time I will try the Asian Veggie Patty.

I Couldn't Sleep So I Binged!

This is what I woke up to this morning. A big pile of wrappers from Hershey Kisses with Almonds. If you read my post last night you already know that I was having a binge night but I thought I had gotten past it when I ate a double fiber English muffin with peanut butter and then some Jillian Micheals 30 Day Shred and a shower. I had planned to paint my nails but I had to get the girls to bed and pack a lunch and dinner for my husband for today.
So I was feeling better when I went to bed. I took my Tylenol PM that I take every night to help me sleep and I went to bed around 11pm. I laid in bed until 12:59am and thought about food. How sad is this. I couldn't sleep because I was thinking about food. Seriously, who does this? It is kind of sick to think that I laid in bed for two hours fighting the urge to get up and eat. What is wrong with me? For about the last half hour I was thinking about the Hershey kisses with almonds that I had put in my husbands work bag on Sunday so that I didn't eat them. I was really hoping he left them in the bag instead of taking them out and leaving them at work.
Finally at 12:59am I looked at the clock. I decided that it was ridiculous for me to lay in bed any longer and not sleep. So I told myself that I will go down stairs an eat two pancakes with sugar free syrup and then go to bed. I went down stairs and ate 3 pancakes with sugar free syrup and then decided that I already ate to much so why not eat the Hershey kisses. So I dug through every pocket of my husbands work bag until I found them and this is what led to the picture above. Not a good night. Although, as soon as I ate the chocolate I went to bed and slept the rest of the night. It's crazy! I swear sometimes it feels like I sabotage myself. I did so good all week just to ruin it with one bad night. I hate it!

Recipe Of The Day: Skinny Cheesecake

I absolutely love this recipe. I made it for the 4th of July this past summer. It was so quick and easy and really tastes like cheesecake. It even has that heavy texture that cheesecake has. I put a can of the sugar free fruit pie topping (made with Splenda) on top right before serving.
If you like cheesecake you will like this one.

Skinny Cheesecake

Makes: 9 servings (1 wedge each)
PAM Original No-Stick Cooking Spray
1/2 cup graham cracker crumbs
1-1/2 cups fat free small curd cottage cheese
1 cup Egg Beaters Original (1 cup = 8 oz)
1/2 cup granulated sugar
1/2 pkg (8 oz each) fat free cream cheese (4 oz = 1/2 of 8-oz pkg)
1/4 teaspoon grated lemon peel
1 tablespoon fresh lemon juice
Assorted fresh fruit, optional

1. Preheat oven 325F. Spray bottom and sides of 9-inch square baking dish with cooking spray. Sprinkle graham crumbs evenly onto bottom and up sides of baking dish.
2. Place cottage cheese and Egg Beaters in blender container; cover. Blend until smooth. Add sugar, cream cheese, lemon peel and juice; cover. Blend until smooth. Pour into prepared baking dish.
3. Bake 50 minutes, or until center is set and top is lightly browned. Cool in dish on wire rack; cover. Refrigerate at least 2 hours or until chilled. Cut into 9 squares to serve. Garnish with fruit, if desired.

Recipe Of The Day: Seven Layer Taco Dip

I love this stuff! It has a nice combinaton of spicy and creamy. I made it to take to my Aunts house two weekends ago and everyone loved it. My husband will eat half of it at one sitting if I let him. I usually only make it over the summer when I go to picnics but when I took it to my Aunt's we ate it as an appetizer while we were cooking the food. It was a big hit.

16 servings

1 (1 oz) pkg taco seasoning mix
1 (16 oz) can refried beans
1 (8 oz) pkg fat-free cream cheese, soft
1 (16 oz) container fat-free sour cream
1 (16 oz) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 oz) can sliced black olives, drained
2 cups reduced-fat shredded Cheddar cheese

Spread the refried beans onto a large serving platter. In a medium bowl, blend the taco seasoning with sour cream and cream cheese, spread the mixture on top of the beans. Sprinkle on the cheddar cheese. Top the sour cream mixture with salsa. Next add a layer of lettuce, then green bell pepper, tomatoes, and finally green onions. Garnish with black olives.

I Can't Stop Eating Today!

I don't know what is wrong with me. I seem to have this out of control hunger today. Nothing seems to satisfy me. I feel like I have eaten one of everything in the house and I still feel hungry. Well I shouldn't say hungry I just feel the need to eat. I'm not sure if I am just hungry for something I don't have and that's why I'm not satisfied or if it is just that time of the month. Either way I want it to stop. I feel like I am going to gain or at least not lose weight this week because I am eating so much today. I feel like all I can think about is food. Do you guys ever have days like this? Any suggestions?

Level 2, 30 Day Shred

I just started level 2 of the Jillian Micheals 30 Day Shred yesterday. It was a lot harder then I expected but I was able to do it. I was covered in sweat when I was done but I made it through the entire thing. The whole time I was doing it I was thinking "I am so going back to level one next time". LOL.
I'm not really sure if I should be doing level 2 or not. I still feel pretty challenged with most parts of Level 1 but on a few things I started noticing that I wasn't sweating as much and it was feeling easier. I guess in the back of my mind I want to go back to Level 1 because Level 2 is so hard.
Is anyone else doing the 30 Day Shred. When do you move up to the next level?

Pain After Exercising

This may sound really silly but I kind of enjoy the pain I feel the day after I had a good workout. I know some people really dread the soreness they feel a day or so after exercising but I get really excited when I feel that soreness. It reminds me of the hard work that I did the day before and it really make me feel like what I am doing is working.
Lately, since I have been doing the Jillian Micheal's 30 Day Shred regularly, I have been thinking about whether the pain I am feeling is really a good thing. To me it feels like I am really toning my muscles but I have been wondering if I am really doing damage to my body. So I decided to do a little research to put my mind at ease.
What I found out is that the pain we feel a day or so after exercising is actually called Delayed Onset Muscle Soreness which is very different then the pain you feel from a sudden injury. Delayed Onset Muscle Soreness is a common response your body has to a new or more strenuous exercise regimen. Adding new activities to your exercise program that your body is not used to can cause this type of pain to show up within the next day or two after your workout.
So the pain I am feeling is completely normal and just a response to me pushing my body a little harder each day. Yeah!!! I was excited to learn that I can continue to feel happy about feeling sore after exercising because it does mean that I am really getting something out of the time I spend working out.
And for all of you that think I am crazy about enjoying the pain, I have a few tips on how to prevent your body from feeling as much pain after exercising.
1. Warm up before jumping into exercising.
2. Cool down after exercising.
3. Start gradually when adding a new exercise and slowly work your way up in intensity.
4. Avoid sudden changes in the amount of reps or amount of time you exercise.

If the soreness you feel does not go away in a week or so you should consult a doctor because this may be a sign of a serious injury.

Organizing Coupons

Please don't laugh but this is my coupon organizer. It used to have a cover on it but my husband pulled it out of my purse a few weeks ago and it was so heavy the top pulled off.
I am hoping you guys can help me. I am looking for some suggestions on what to do with my coupons. I have seen a lot of coupon organizers but I really haven't seen any that I like. Actually some of them are pretty expensive. I have seen ones that cost $20.00. I think that is ridiculous. Who wants to spend that much money on something to hold their coupons. You use coupons to save money not to cost you more.
I need something to help me be more organized. It takes me several hours to go through flyers and coupons before I go to the grocery store. I would love to save a little time by keeping my coupons in some organized fashion. Right now I have them separated by store coupons, food coupons and medicine and household coupons. I think I would like to possibly have them divided into more sections.
I would love to hear how you all keep your coupons organized. I could really used some new ideas on what to use as an organizer and how to separate them into categories.

Weighing In - Part 2

I just wanted to thank everyone for the advice on weighing in more then once a week. It is always helpful to hear ideas from others. I think you all had some really great advice.
I have decided to only post my weigh in once a week but I will be unofficially weighing my self in the middle of each week. I decided to do this because I am hoping it will help me stay on track or some weeks get back on track. I can totally relate to Colleen's comment about the three reasons she only weighs in once a week. I completely agree with everything she said. I can definitely see myself getting discouraged and eating more if I am not losing or celebrating by eating if I am losing. Maybe the twice a week weigh in will not be good for me but I figured it can't hurt to try it for a few weeks. You never know it may be a great thing for me.
Thanks again for all of your advice. I will keep you updated on whether it is working for me or not.

Check It Out: Humble Pie

You have to check out today's post, Humble Pie, over at Money Saving Mommy's site. I swear this was so me today only I did it with two miserably cranky kids. LOL. I really love this post! Click here to read about the adventures of being, what I call myself, a Crazy Coupon Lady.
Today's saving were well worth the planning, coupon clipping and 2 1/2 hour grocery trip. Although I could have done without the two cranky kids. I can't blame them. two and a half hours is a really long time for a four year old and nine month old to behave in a store. Anyway, I ended up spending $70.00 and saving $11.50 in bonus club savings and $36.00 in coupons. That's a total of $47.50 in savings on a $70.00 purchase. That makes me want to jump up and down. I may have done that except the woman at the self-checkout was pretty annoyed with me by the time I was done :). It wasn't my fault that the coupon scanner wasn't working properly. It was an exhausting grocery trip but it is the only way for me to stay on a budget, eat healthy and continue to be a Stay At Home Mom. Well worth the exhaustion!

And The Number Is... Week 7 Weigh In

Another week has passed and I am still not doing things the way I had planned. When I first started my weight loss journey 7 weeks ago I had planned on losing 20 pounds in the first 2 months and I'm not even close to that at week 7. Maybe I was a little unrealistic but it would have been nice :).

This week has been a little crazy for me. We left for New York at 6:00am Sat. morning and got back at 6pm Monday evening. It was a lot of traveling with two sick kids but we all had a great time. It was a little stressful because my oldest daughter was getting over croup and still has a nasty head cold and my baby got a double ear infection and head cold while we were there. So I really did not get much sleep if any while we were away. This caused me to feel the need to eat constantly to stay awake. That and I was just at the point where I was so stressed that I didn't care if I gained weight. So I ate some donuts, birthday cake, brownies, a Mrs. Freshley's cherry pie (my first one and it was to die for) and many other things that I can't remember. It was not a good weekend for losing weight.
When I got back home I started eating healthy again and I have been working really hard this week on exercising. I did my Jillian Micheal's video 5 days this week and I can really feel a difference. I feel so good when I am done with that workout.

And for the part you have all been waiting for. This morning the scale said 206.1. Somehow I lost almost the whole pound I gained last week. I credit it to the Jillian Micheal's 30 Day Shred and drinking lots of water. I really believe the workout is working for me. It does upset me a little to think about how well I could have done if I wouldn't have messed up this weekend. But with 2 sick kids I'm lucky I survived the week.

Dinner Experiment: Buffalo Chicken Strips and Honey Mustard Chicken Strips

Last night it was getting late and I had to start dinner and I realized that I really did not have much food in the house. We were away for the weekend and kids have been sick so I haven't made it out to the grocery store in awhile. So I decided to be creative. I remembered that I had some chicken breasts in the freezer from SAM's Club (I love to buy the big bags of already trimmed chicken breasts in a recloseable bag. It allows me to just pull a few out at a time and they are a great price). I pulled four breasts out of the freezer and defrosted them in the microwave. Then I mixed some hot sauce(just the store brand) and some I can't believe it's not butter spray. In another container I heated a little honey and mixed it with some Dijon mustard. After the chicken was defrosted I cut it into strips and dipped half of them in the hot sauce mixture and then rolled in bread crumbs and the other half in the honey mustard mixture and then bread crumbs. I put them on a baking sheet sprayed with cooking spray and then sprayed a little cooking spray on top to make them a little crispier. Then I baked them at 350 degrees for about 30-35 minutes flipping in the middle.
They turned out great. It was really easy to throw them together and my whole family enjoyed them. I really liked the spicy ones but my husband thought they were to hot so he dipped them in FF ranch dressing. He really liked the honey mustard chicken. I thought they both turned out wonderful. I will definitely be making them again.
I love to experiment in the kitchen. I used to experiment a lot more before I started trying to lose weight. I am just now realizing that I can still experiment with food even when I am eating healthy. It is so relaxing and I enjoy it so much.

Weighing In Twice A Week?

I have been thinking about weighing in twice a week and I wanted to find out what everyone else thinks about this.

I have noticed that I seem to get off track in the middle of the week and then when it comes closer to weigh in I really get my butt moving so I don't gain weight for the week. So I thought maybe if I start posting my weight twice a week I will have an easier time staying motivated. I know I have read about not weighing yourself more then once a week because your weight fluctuates so much every day. So I don't know if this is such a great idea.

I would love to hear what all of you think about the subject. I really feel like I need that mid-week motivation and I could really use some advice.

WW Snickers Bar

I Walked On A Lake!

I'm sorry I have been gone for a few days. I spent the weekend in New York visiting my Aunt for her 50th birthday. I had planned on blogging when we were there but it was a crazy busy weekend and both of my daughters were sick. My oldest had croup and was on steroids and we had to take my baby to the emergency room at 1:00 am yesterday because she would not stop crying. She has a really bad double ear infection and upper respitory infection. I did not get much sleep at all on Fri, Sat. and Sunday night so I'm sure you can imagine how well I did eating those couple days. Let's just say I was so tired I ate to stay awake and honestly I can't even remember what I ate. I do know that I ate two donuts, a peice of birthday cake, two mini bagels with low fat cream cheese (sooo good!) and we stopped for fast food twice and went to Olive Garden.
To make it worse I didn't exercise at all. I guess I shouldn't say that. We did go to a winter carnival at Lake George and we walked approximately 3 miles including walking across the frozen lake. I loved it! It was the greatest feeling standing on ice in the middle of a huge lake. I really want to do it again. My husband and I pushed our four year old across it on her behind. She had a snow suit on so she slid really well. She would go flying and then spin in circles before she stopped. She loved it and we loved watching her laugh.
This was definitely a great trip even with no sleep. Did I tell you that I love coffee :). It was wonderful to see my Aunt who lives almost five hours away and to celebrate her 50th birthday with her. She is the best Aunt in the world and I love her so much. Happy Birthday Aunt Diana!
I am hoping that the lack of sleep and the walking we did will counteract all of my eating but I'm pretty sure it won't. So I am going to do my best the next couple days to exercise, drink lots of water and really watch what I eat. I don't want to have another week of gaining weight. Wish me luck!

Fridge Front Friday

You are all probably thinking "What is Fridge Front Friday?". I will start by telling you that I found a great idea earlier in the week on one of the blogs I read. I am so sorry that I can't remember who's idea it was (I read way too many blogs at 12am, again, sorry). Anyway, the woman posted that she puts a list of goals for the week on the front of her fridge. This got me thinking and that is how I came up with Fridge Front Friday. Every Friday I will post a list of goals and motivations to keep me going for the week. And what better place to post them but the front of the Fridge! The place we all go when we are hungry, bored or feeling a little down. I thought it would be great to see a reminder of why I am trying to lose weight, how I plan to do it and maybe a little something to give me some motivation before I lose it to the dreaded fridge. I am hoping this will help me control some afternoon/pre bedtime binging which seems to be my big problem right now.

And The Number Is... Week 6 Weigh In

I have to say that this has been a really good week for me. I planned on exercising every day which I didn't do but I did exercise five days out of the week. This is definitely an improvement for me. It really felt good to exercise. I got the Jillian Micheals 30 Day Shred DVD this week (click here to enter my giveaway) and I have done it three days in a row. I wasn't really sure if I would be able to do it today because I am in so much pain from yesterdays workout but I was able to do it. Level 1 has not gotten any easier yet. I am wondering if it ever will. The hardest part for me is in the beginning when you have to do jumping jacks then jumping rope then back to jumping jacks and then jumping rope again. I find myself so out of breath that I think I may have an asthma attack. I hope this part starts getting easier soon. It is a tough video but when I am done with that 20minutes I feel so good. Sweaty but good :).
I drank a ton of water this week. This has definitely become a habit for me which is good because I usually can go a day on only 12 ounces of water. Seriously, I usually don't ever feel thirsty. It not a good thing.
I ate fairly well this week. I had a few moments where I ate to much. I went to two birthday parties this week and I only ate 1/2 a piece of cake. I shouldn't have had any but my daughter took a piece and didn't touch it and I felt bad wasting it. Not a good excuse. Next time I will throw it away. I also went out to a steakhouse for dinner this week. My husband got a little bonus on his check and wanted to celebrate so of course I couldn't say no ;). He wanted to go to Red Robin for some juicy cheeseburgers and fries but I was able to talk him into Logan's instead. To make a long story short our meal took over an hour to cook and we ended up getting it for free with out even saying anything about the wait. Unfortunately it was after 8pm, I was starving, and they kept bringing us the most delicious buttered rolls I have ever tasted. That and they have peanuts on the table. So I ate 3 rolls drenched in butter (sorry if I am making you hungry :) )and about 10 peanuts. Not to bad for the amount of time we waited but boy did those rolls hurt my points for the week. My meal was a grilled salmon Cesar salad (lite on the Cesar dressing). It was wonderful and I have been craving it ever since. Can't wait to go back!
On the up side I did track all of my points for the week. I used all of my points every day plus all of my extra weekly points and almost all of my exercise points. I ended up with 1.5 points left. I guess I ate more then I realized this week.
I did have trouble with eating veggies again. I'm not sure why. I really love veggies but I just didn't seem to eat many of them.
And the moment you have all been waiting for. I stepped on the scale this morning and it said 207 pounds :(. How did this happen? I gained a pound. I really thought I did good this week. I stayed within my weekly points and I exercised a lot. I am a little disappointed with the number but to tell you the truth I am really excited about the way I feel. I actually feel like I look better this week and I just feel good all around. I am proud of myself for tracking and sticking to my points and really making myself exercise even when I didn't want to do it. I think it is the exercise that is making me feel great. I am doing the 30 day Shred DVD and the wii fit. Let me tell you that 10 minutes of hula hooping is not as easy as it sounds :).
All and All I feel this was a good week. Yeah I gained a pound but I am not giving up yet. I hope it makes me push harder next week.

Recipe Of The Day: Triple Chocolate Bundt Cake

Yes, it tastes as good as it sounds. Actually it tastes even better then it sounds. This cake is so easy and a great cake to take to picnics or parties. The only problem that I have with this cake is that it isn't really budget friendly but I love it so much that I decided to post it anyway. I figured sometimes we all have to splurge. Especially for chocolate or in this case triple chocolate! I can promise you that if you make this cake you will not be disappointed.

Triple Chocolate Bundt Cake:

1 box chocolate cake mix
1 (4 serving) box instant JELL-O sugar-free, fat free chocolate
1 (4 serving) box instant JELL-O sugar-free, fat-free white chocolate (or you could use vanilla) pudding
1 cup liquid egg whites or 5 egg whites
1/2 cup of chocolate chips
1 cup applesauce (no sugar added)
1 1/2 cups water
1 TBS powdered sugar
cooking spray

Mix together cake mix with both boxes of pudding mix. Add egg substitute, water and applesauce and mix well. Stir in chocolate chips. Pour batter into a sprayed bundt pan. Bake at 350 degrees for 45-50 minutes. Let cake cool before cutting :)
Yields 16 slices

Nutritional info: (per slice) 196 Calories, 4.6 g. fat, .25 g. fiber

I can walk!!!

I am so excited because I can walk today. After last nights workout with my new Jillian Micheals video (click here for my 30 Day Shred giveaway) I was afraid that I wouldn't be able to walk today. Seriously I could barely walk up and down the stairs last night. It was kind of funny to think a 20 minute workout could do this to you. Like I said in my last post I am really out of shape.

Last night I was wondering if I would be able to do the workout again today. I wasn't sure if I would be able to move but I woke up this morning feeling great. I was surprised because for one I did that workout and two I think my four year old has croup (not sure if I spelled that right) and she was up several times last night. Not to mention my 9 month old was up 3 times to eat last night. It always seems to hit you at once doesn't it? Anyway, I feel great today so I am going to do my 30 Day Shred Video as soon as I get a chance. I am so excited about getting into shape. I hope I can keep this attitude because it really helps my motivation to exercise.

Today I received the Jillian Micheals 30 Day Shred DVD in the mail. I was so excited that I opened it up and did it right after dinner. I have to say that I loved it and I hated it at the same time. I loved it because I could feel it working every muscle in my body and I hated it because it was so hard that I almost didn't make it through the 20 minute workout. I'm just kidding about the hating it part. It really is a great workout video and I can't wait to do it again tomorrow (if I can move my legs after doing all of the jumping jacks). Seriously that is what killed me the jumping jacks and the jumping rope. I guess I just didn't realize how out of shape I am.

Recipe Review: Chicken Corn Chowder

Wow! This had to be the best chicken corn chowder I have ever had. What made it taste even better was that it was cheap, easy to make and my whole family loved it. Did I mention that it was only 5 points for 2 Cups. Seriously it was the best soup I have had in a long time. I did alter Money Saving Mommy's recipe a little bit. I will list the changes below. I can't wait to have it for lunch tomorrow or maybe even a snack tonight ;) Thanks again Money Saving Mommy for posting this wonderful recipe. My family loved it so much that I plan to make it every week.

Chicken Corn Chowder (my version):

3 14.5 oz cans of fat free chicken broth
2 14.5 oz cans of creamed style corn
1 14.5 oz can of whole kernel corn
2 Chicken breast halves
1 whole onion
1 tsp celery powder
2 large potatoes
3 hard boiled eggs

I cooked everything the same as the original recipe but I did leave out the other spices. I wasn't sure if I would like them so I didn't put them in.

Recipe Of The Day: Creamed Corn Pancakes

If you are looking for an inexpensive side dish then you will want to try this recipe. I absolutely love these pancakes. They are low fat but they taste like they have been fried. With just four ingredients you can throw them together in a matter of minutes. Sometimes I even eat them as a meal instead of a side dish. They are really that good.

Creamed Corn Pancakes

1 16oz can of creamed corn
3 heaping tablespoons of flour
1 egg
1 tsp. baking powder

Combine all ingredients. Spray a skillet with cooking spray and heat. Pour 1/4 cup of corn batter onto the hot skillet. Fry until golden brown. Turn over and brown the other side. Salt lightly and serve.

2 pancakes = 2 points

Picture Update!

If you haven't noticed I updated my picture on the side of my blog. I was surprised that I could actually see a little bit of a difference from when I started. When I look in the mirror I really don't see a difference but I do feel a little different in my clothes. So when I saw these pictures next to each other I was really happy. My hard work is paying off little by little. I just have to remember this each time I want to eat something unhealthy.
I plan to post a picture after each ten pounds lost. I can't wait to see the next one.


Yes, I am kind of disappointed at this moment. I wanted to be in the 100's by the end of this week and I haven't lost an ounce since last Thursday. I have really been watching what I ate and staying within my points which makes it even more disappointing.
It looks like I am not going to make it to the 100's by the time I go to my Aunt's house this weekend. I guess I am going to have to be ok with that. I really shouldn't complain. I have lost 10.5 pounds and I'm sure some more before the weekend. I think I set a unrealistic goal for the week and now it is just making me feel disappointed. At least I learned a lesson from this week. Don't set unrealistic goals. It will only make you feel bad about yourself when you don't meet them. I'm not going to let this disappointment get in the way of my weight loss for the week. I am going to continue to work hard and loss a few pounds. I'm sure I am going to feel better about myself when I lose this week even if I am not in the 100's. I know that I am so close to getting out of the 200's and I am going to be just as thrilled if it happens next week instead of this week.

Recipe Of The Day: Chicken Corn Chowder

Check out this recipe that I came across today on the blog Money Saving Mommy. It is for Chicken Corn Chowder which is a favorite of mine. It looks like a very healthy recipe and with so few ingredients I think it will only cost a few dollars to make. Heather (the site's author) writes about great recipes (several which I have found to be low fat)and money saving advice. It really seems like a great blog. Recipe Review: Kielbasa and Red Beans

I'm sorry I didn't post this on Wednesday like I had promised but I realized that I had Church that night and my husband would not have been able to stop and get me the salsa in time to cook it. Anyway, I decided to cook it tonight and it was wonderful. If you are looking for something with lots of flavor and very filling then this is it. I put 1 cup of the mixture on top of 1/2 cup of Korean rice and it was way to much food for me to eat and believe me I don't have a small appetite. It really didn't look like a huge amount of food but it was really that filling. I'm not usually one to not clean my plate but tonight I couldn't even force myself to take another bite. The amount of spice in this dish is perfect. My husband doesn't like anything too spicy so I didn't add extra hot sauce until I had it on my plate.

This is definitely a keeper in my recipe book. It is so hard to find inexpensive recipes with great flavor that are low in fat and this recipe hits all three. The whole meal cost me approx. $4.50 (I was able to get the turkey Kielbasa BOGO).

New Incentive!

Last night I found a new incentive for losing weight. My Aunt posted this picture of me on facebook. This picture was only taken two and a half years ago. It makes me sick to think about how much weight I have gained in the past two + years. I almost don't recognize myself in the picture. My sister actually said that she didn't recognize me in the picture. I guess I have had a child since this picture was taken but I am not calling all of this baby weight. I am calling it I can't control my eating weight.
I've decided that instead of dwelling on the fact that this is what I used to look like I am going to use this picture as incentive for what I could look like if I keep losing the weight. I think I have about forty-five to fifty pounds until I am back to that weight. I weighed around 155-160 pounds at that point. The sad part is that I thought I was so fat back then. I wish I could just be happy with my weight. I'm not sure if that will ever happen but I do know I was happier with it at that time.
Just thought I would share my new incentive with everybody. Maybe you have an old picture of yourself that you could use for some new incentive to lose those extra pounds.

And The Number Is.... Week 5 Weigh In

Can it really be five weeks already. Boy does time fly! I will start by telling you that I had a rough start to this week. The Super Bowl and eating out on Friday and Saturday really did not help. If you haven't seen my post on the Super Bowl click here to check it out. I was starving and out of control that night but I still haven't eaten that Drumstick Ice Cream cone. Yeah me! And the eating out thing is never good for me. Click here to see what I mean. Anyway, On Friday night I had a French Dip Sandwich and fries. Luckily I wasn't that hungry so I didn't touch the fries and I ate about 2/3 of the sandwich. Still a bad choice. On Saturday now that I think about it I really didn't do to bad when we went out to eat. I had a chicken barbecue sandwich with extra relish and a slice of pizza which my daughter ate half of. I probably would have eaten bad that night but my mom was with me and she is trying to lose weight and she ordered healthy. Thanks Mom! You will not believe this one. I actually skipped having ice cream that night (it is a ice cream restaurant). Everyone around me ate it while I watched and it only bothered me for the first minute or two. Now that I look at the scale I am so happy I didn't eat that ice cream.
Let's get to the good part. I got on the scale this morning and the number I saw was 206. Yeah!!!!!! As I was taking a shower I realized I have lost over ten pounds. Lets just say did a little happy dance in the shower this morning. I can't even tell you how excited I feel. Ten pounds was my first goal and I have hit it. Ten pounds might not seem like much to some people but when I started five weeks ago ten pounds sounded almost unachievable. I think the first 10 pounds are always the hardest and now I am at the point of no return. Soon I will be saying bye to the 200's and Hello to the 100's. This is my next goal. I would really like to be in the 100's by Valentine's day. I am going to visit my Aunt in another state for her 50th Birthday and we are going to get manicures and new hair cuts I hope. How great would it feel to be in the 100's to have this done. I can't wait.
Losing 6 and 1/2 pounds in 9 days does not seem doable but I really want it. Maybe if I actually exercise this week I will be able to achieve it. Wish me luck!

Goals for this week.

1. Exercise, Exercise, Exercise. My goal for last week was to exercise 4 times though out the week. I didn't exercise at all. This week I need to exercise every day no matter what.
2. Drink lots of water. I'm still doing really well in this area and it is really helping.
3. Track everything I eat. I did really well with this the past week.
4. Eat more veggies. Some days I am still lacking in this area.
5. Stay within my budget. I did well with this last week.

Recipe Of The Day: Kielbasa and Red Beans

I found this recipe a few months ago on the Weight Watchers boards. It was said to have come from I chose this recipe for today because I have an extra packaage of Turkey Kielbasa in the fridge (buy on get on free at the grocery store this week)and a can or red beans in the cupboard. The only thing I am missing is the salsa. I will ask my husband to pick it up on the way home from work. That way I can have it all ready and just add te salsa when he gets home and let it simmer for 25 minutes before serving. I can't wait to try it! I will let you know what I think of it tomorrow.

Kielbasa and Red Beans

Serves - 4


14 oz. package Healthy Choice Turkey Smoked Sausage or Turkey Kielbasa, sliced into 1/2" pieces
1 small onion, sliced
1 clove of garlic,minced
15.5 oz. can of kidney beans
1 cup of salsa
salt, black pepper, red pepper flakes to taste
dash of hot sauce
ff cook spray

Spray medium saucepan with non-stick cooking spray. Saute garlic and onions about 2 minutes (until softened but not mushy). Add smoked sausage; stir and cook sausage for 2 minutes. Add beans, salsa, spices and hot sauce. Bring to just before boiling, lower heat, cover and simmer for about 25 minutes.
Serve over rice, if desired.

257 cal., 5.3 g. fat, 4.3 g. fiber

Conquering Emotional Eating

I wish I could say I have found the magic cure for emotional eating but I haven't. I am an emotional eater just like many of you. I don't think it is something that us woman will ever be able to completely overcome. If I am wrong please, please let me know your secret :)
I'm sure everyone has their own type of stress that causes them to overeat. My stress eating is usually started by my baby crying or my four year old whining non-stop. It's is kind of funny when I look back at the way my stress eating has changed in the last five weeks. Five weeks ago every time my baby would cry or my four year old would whine I would walk out into the kitchen and eat a few pieces of chocolate or a cupcake or anything sugar or chocolate. I'm sure you get the point. I think after months of doing this it became a really bad habit. It seemed almost uncontrollable. It was like a way of taking all of the stress away. I would eat my chocolate and then make a bottle or a snack or some lunch for my kids and then I would be fine. It really did seem to help me get through some really stressful moments.
When I started this weigh loss journey I really thought I would never be able to stop the stress eating. Surprisingly it was easier then I thought. As of today I very rarely go out to the kitchen and grab a piece of chocolate or a sugary snack. I am so proud of myself. Now don't get me wrong I still have moments where I give into my stress and eat whatever I want but I definitely do it a lot less then I did five weeks ago.
How do I do it? It was really hard the first week because I really wanted that chocolate. After that I very rarely think about eating when I am stressed. Every so often I feel very stressed and start thinking about eating something but I have only given in a few times in the past few weeks. I really have to credit a lot of my success to the Weight Watchers program. Writing everything down that you eat really makes you think about everything you put into your mouth. That piece of chocolate does not seem as appealing when I think of all of the points I am taking away from the rest of my day. A lot of times I think about how I could eat a large grilled tortilla and 2 tbsp of Hummus (which I really love) for the same amount of points as that one little piece of chocolate. I think it also helps that I am eating at regular intervals. Prior to my weight loss journey I would go without eating so long that when I would get stressed there was no stopping me. I was hungry and miserable from the stress. I have found that stress and hunger are not a good combination.
I know I will always be an emotional eater but what I have learned is that I have to control it. If I am not careful I could fall back into the same pattern I was in five weeks ago.

The way I am conquering emotional eating:
1. Stopping the habit of shoving food in my mouth every time I get stressed. This was the biggest change I had to make. Once I stopped the habit is has been so much easier. I never really thought of it as a habit but I have learned that it really is.
2. Eating at regular intervals. I make sure that I don't let myself go more than a few hours without eating a meal or a snack. I used to feed the kids and not myself and then stress would hit and I would binge. Like I said before stress and hunger are not a good combo. I have found it a lot easier to conquer my stress eating if I am not hungry all of the time.
3. Writing down everything I eat. This really makes me think about everything that I put in my mouth before I put it in my mouth.

Recipe Of The Day: Slow Cooker Sweet And Sour Chicken

This is another of my all time favorites. It is so simple and I can find all of my ingredients at Aldi. I serve it over Korean rice for a healthy filling meal. I'm sure it would taste just as good served over white or brown rice if you don't have Korean rice.

Slow Cooker Sweet & Sour Chicken:

1. 16 oz boneless skinless raw chicken breasts, cut into bite size pieces
2. 5 oz Sweet and Sour Sauce (ex. LaChoy, or store brand)
3. 1/4 tsp. garlic powder
4. 1/4 tsp. onion powder
5. 8 oz pineapple chunks in juice, drained (reserve 1/4 cup)
6. 2 TBSP. Brown Sugar
7. 16 oz bag frozen stir fry vegetables

Spray crock pot with non-stick cooking spray. Add chicken; season with garlic powder and onion powder. Stir in sweet and sour sauce, pineapple chunks, brown sugar and the 1/4 cup reserved pineapple juice. Cover and cook on Low for 6-7 hours. Add frozen vegetables during last 30 minutes of cooking and cook on High. Serve over rice if desired.

Recipe Review: Crockpot Cabbage With Kielbasa

Tonight I tried the Crockpot Cabbage w/ Kielbasa that I posted last week. Click here for the recipe. It was great! I was able to find Turkey Kielbasa at the grocery store buy one get one free. For $3.99 I was able to get two 16oz packages. Also the cabbage was on sale for $.79 a pound. So the whole meal cost me about $4.00.
I did make a few changes to the recipe. I didn't have time to cook it in the crockpot so I cooked it on the stove for about a half hour. It was so quick and easy. Instead of 1/4 cup of water I used 1/2 a cup. I also added a little extra garlic and some onion salt. The only change I will make next time is to double the cabbage. By the time the cabbage cooked down it looked like there was about 1/2 cabbage and half kielbasa. I would have preferred a lot more cabbage. I think it all depends on how much you like cabbage. I love it!
I have to give this recipe two thumbs up. It was inexpensive, quick and easy to cook, extremely healthy and it tasted great.

Super Bowl Food :(

Well, I really wasn't planning on doing anything for the Super Bowl this year but last minute my husband suggested we pick up some food and have a little party (just the 4 of us). So after a busy day at the hospital, visiting my husbands 92 year old grandmother, we were all starving. Let's just say we all know the rule about never ever go to the grocery store hungry! I broke the golden rule. I was starving and in a hurry so I bought Shrimp and cocktail sauce (good choice), cheddar bacon potato skins, mozzarella sticks, buffalo chicken bites, jalapeno poppers, sour cream, cheese dip and tostitos, fudge, chocolate chip cookies, Drum Stick Ice cream cones and bologna and cheese. As you can see I was not thinking clearly at that moment. All I could think about was eating and boy did I eat.

I've decided I am not going to get to upset with myself. I really enjoyed myself and I had a large variety of fattening foods but I really didn't eat as much as I used to. I guess occasions like this are going to come up and I just hope each time I will make better choices. But for now I am going to exercise a lot in the next couple days to get some extra points to cover my Super Bowl Food.

What I have learned from this experience:
1. Never go to the grocery store hungry.
2. Don't take your four year old with you.
3. Don't let yourself get to the point of being so hungry that you can't think straight.
4. Always take healthy snacks with you on long road trips.
5. Last but not least. Eat that Drum Stick Ice Cream Cone before you start feeling the guilt :) (just kidding - I'm really glad I didn't eat it)
